It was kept very clean, and the tables were nicely spaced apart, so I could eat without feeling cramped. Looking over the menu, there was quite a variety, from signature noodle dishes to dumplings and pork cutlets, which gave me the happiest dilemma over what to order. The cold broth was dotted with tiny ice crystals, and it was generously piled with savory shredded chicken. The noodles seriously never seemed to disappear, no matter how much I ate.. But they were so wonderfully springy o_o I immediately scooped up a spoonful of broth first, and the tang from vinegar and mustard was perfectly balanced, making the savory flavor bloom right from the first sip. There was absolutely no gaminess or heaviness, and the finish was so clean! The noodles were amazingly chewy too; taking a big slurp with the savory chicken topping filled my mouth with cool freshness. The moment it arrived, I completely fell for the look of it. Savory mozzarella cheese was overflowing inside the beautifully golden fried coating... Dip it in wasabi, dip it in pork cutlet sauce, then take one crunchy bite: the outside is crisp, while the soft cheese inside is deliciously savory. The coating was not thick either, so it did not feel heavy, and the meat-and-cheese combination was fantastic. Especially, one bite of cool, tangy chogye guksu followed by one bite of savory pork cutlet—this combo is the best..
