## Warm kalguksu near Korean Folk Village

With the weather suddenly turning much chillier, I was craving a steaming bowl of broth, so I stopped by Yubok Kalguksu Yongin Korean Folk Village Branch (유복칼국수 용인민속촌점), a popular kalguksu (knife-cut noodle soup) spot in Yongin, on the way to shop at Costco Gongse-dong.

Yubok Kalguksu Yongin Korean Folk Village Branch is near Korean Folk Village, so it was easy to find. Since I was in the mood for something warm and brothy that day, I decided on kalguksu as soon as I saw the menu. The parking lot was right in front too, so even arriving by car, I could park easily and head straight inside.

## A comfortable dining room, even when busy

Inside, the restaurant had a clean, comfortable atmosphere, and even though there were plenty of customers, it was not noisy, which I liked even more. Rather than feeling crowded or loud, it felt like a place where you could relax over a meal. It seemed nice for a family visit or lunch with friends, and the tables were spaced fairly generously, so I never felt cramped while eating.

## House-made kimchi and bok-haemul kalguksu

The kimchi at the self-service bar was apparently made in-house, and its bright color alone caught my eye. It had a lightly spicy flavor that went so well with the kalguksu. It was not overwhelmingly intense, but it perked up the noodles nicely, so I kept adding a piece of kimchi as I ate.

We ordered the bok-haemul kalguksu, a pufferfish and seafood kalguksu, and Yubok Kalguksu had something distinctive compared with ordinary kalguksu. They told us that the broth is made with pufferfish stock! Pufferfish has long been known as an ingredient associated with circulation, high blood pressure, diabetes, detoxification, hangovers, and skin health, so I was even more curious about how the pufferfish broth would taste.

Of course, it is hard to expect health benefits from one meal, but perhaps because the broth was made with pufferfish stock, the clear soup had a savory aroma that really tickled my nose, haha.

## Noodles that suited the clear, deep broth

The seafood, mushrooms, and vegetables all came together nicely. From the first taste, it was not intensely seasoned or overpowering; instead, it tasted clean yet deep. One spoonful of broth revealed a rich, refreshing flavor that suited the chilly weather so well that I kept going back for more, hehe.

The bouncy noodles also paired beautifully with the broth. Eating the noodles with the warm soup made for a satisfying meal, and it felt like a particularly fitting menu choice for this time of year, when the temperature swings between day and night.

## The gentle kalguksu-and-kimchi pairing

The kimchi was not too aggressively seasoned, yet it really awakened the appetite alongside the kalguksu, so I kept placing pieces of it on top of the noodles. Kalguksu on its own can start to feel a little mild, but the kimchi made the combination work so well. Perhaps because it was house-made, it also felt different from the kimchi commonly served at restaurants.
