Gimchiok Paju Unjeong Branch is a Korean BBQ restaurant in Unjeong, Paju, Gyeonggi, grilling aged Korean pork, kimchi, and vegetables on a large pot lid. ## An Unjeong meat restaurant grilling on a pot lid

It had been a while since I’d gone out for a proper meat meal, so off we went to Gimchiok (김치옥)! I found this place while looking for pork belly near Unjeong Station. Rather than a standard grill, they cook the meat on a huge pot lid, so I was excited even before visiting. Meat sizzling away on a pot lid with kimchi grilled alongside it—how could that possibly not be delicious? We arrived hungry on a meat day, and from the grilling visuals to the flavor, this place was quite satisfying!

The tables were spaced nicely apart, so it was easy to dine comfortably. It was spacious and pleasant, with an atmosphere that would work well for anything from a date to a company dinner. Everything felt clean and comfortable, which made it a nice place to eat at ease. We came as a couple on a date this time, but with plenty of tables, it also looked like a solid Unjeong Station spot for a group dinner.

Although it is indoors, it has a casual outdoor-grilling-stall kind of atmosphere, which felt refreshingly different and nice.

## Aged Korean pork and a self-service bar

The meat was naturally what I was most looking forward to that day. Gimchiok ages its Korean pork in-house, so I went in expecting great flavor and juices. There was even a showcase refrigerator at one side of the restaurant with meat aging inside, so being able to see the process made it feel more trustworthy. Seeing the neatly aging meat in the case made me even more curious about the flavor. It looked to be in great condition, and I wanted to get it on the grill right away.

One thing I personally found convenient at Gimchiok was the self-service bar. I tend to eat lots of wraps and side dishes with meat, and being able to pick up what I needed myself meant I did not have to keep calling staff over. Along with a variety of accompaniments, there were ingredients to grill with the meat, too, so you can freely help yourself according to your taste.

## Menu and ordering

Signature dishes include the Korean pork platter set, aged Korean pork belly, aged Korean pork neck, Namdo aged-kimchi braise, and aged-kimchi stew.

At Gimchiok, meat is grilled on a pot lid rather than a typical grill plate.

The basic side dishes included pickled radish sheets for wraps, onion dipping sauce, garlic, seasoned lettuce salad, pickled wild garlic leaves, green-onion kimchi, napa cabbage kimchi, and meljeot (salted anchovy sauce).

## What comes in the value set

- Pork belly and pork neck
- Kabocha squash, king oyster mushrooms, and shishito peppers
- Cheese-loaded steamed egg
- Cheonggukjang stew

The first thing that caught my eye when the meat arrived was its condition. The color was vivid and the grain looked good, making it seem very fresh. It looked plump and clean, without any off smell, so I was excited even before grilling it.

Once we piled the meat, vegetables, and kimchi onto the hot pot lid, it made for a wonderfully abundant spread just to look at. As the meat, kimchi, and vegetables cooked together, the delicious aroma drifted up, making even the wait enjoyable. Plus, you can bring over various ingredients from the self-service bar and grill them on the pot lid however you like, which makes the meal feel even more generous. Picking out this and that to add was fun too, so I never got tired of eating meat.

## How the pork belly and pork neck tasted

I had high expectations because they use aged Korean pork, and after trying it, the meat itself really did taste great. The slices were neither too thick nor too thin—just right to eat—and the fat-to-lean ratio was balanced. With each bite, the juices came through nicely, along with a savory flavor and rich meaty aroma, so I could really enjoy the pork for what it was.

![Golden-brown aged pork belly](https://img.superchart.com/images/paju-unjong-sotttukkeobi-kimchiok/paju-unjong-sotttukkeobi-kimchiok-18-lreii-900.webp)

Most of all, it had a clean flavor without any off smell, so I kept reaching for more without feeling weighed down. Perhaps because it was aged, it had a subtle meaty aroma while still letting the pork’s natural flavor shine. As it browned on the pot lid, the outside became lightly crisp while the inside stayed moist and tender. It was plenty delicious even without kimchi or vegetables.

The pork neck’s appeal was its lighter flavor compared with the pork belly. It had less fat, so it tasted cleaner, but it was not dry at all—its soft, moist texture was lovely. While pork belly was savory and rich, pork neck had a leaner, cleaner charm, so alternating between the two meant we could enjoy their distinct flavors.

## Cheese-loaded steamed egg and cheonggukjang stew

The cheese-loaded steamed egg that came with the meat was not to be missed either. True to its name, the steamed egg rose up like a little bomb and was topped generously with cheese, so the look of it immediately drew my attention. The fluffy, soft egg combined with the cheese’s savory richness, making it a great accompaniment to the meat.

We also got to enjoy a hearty bowl of cheonggukjang stew, a fermented soybean-paste stew, as part of the spread. It came with the value set, and it was nice to have spoonfuls of it between bites of meat. You know how, when you have meat, you keep going back to a stew on the side? That was exactly it. The warm, earthy cheonggukjang stew paired well with the meat throughout the meal. It leaned a little salty, so I think it would be even tastier with meat and rice together. The sort of combination that makes you finish a whole bowl of rice in no time :)

## Why we ordered more

The meat was too good to end the meal there, so we ended up ordering more. We were already fairly full, but it was so tasty that I kept reaching for it 😋 Gimchiok is not simply a place to eat meat and leave; it also has substantial meal dishes such as kimchi braise and kimchi stew, so it seems great for a filling meal out too.

In particular, if you are looking for good kimchi braise in Unjeong, the Namdo aged-kimchi braise on the menu is worth noting. We could not try it that day because we were focused on the meat, but I definitely want to order it next time. There is also aged-kimchi stew, said to have a deep, rich flavor from Gimchiok’s own kimchi, so next time I want to properly enjoy meal dishes alongside the meat. From meat to satisfying full meals, Gimchiok felt like a good choice for dining out.

- When you are craving pork belly grilled on a pot lid
- When sharing aged pork belly, pork neck, or a mixed set with a group
- When you want to add self-service-bar accompaniments to make your meal more abundant
- When you want a comfortable meal for a date or company dinner

Overall, I was satisfied because we could enjoy everything from meat to varied side dishes and meal dishes in one place. Gimchiok Paju Unjeong Branch is somewhere I would like to revisit when I am craving meat grilled generously with kimchi and vegetables on a pot lid. Next time, I will have to try the Namdo aged-kimchi braise and aged-kimchi stew that we missed that day too 😊
