I went back to Hets, a tonkatsu place with two locations — Gwangalli and Jeonpo — that I used to eat at all the time. I'd call Hets a Busanjin tonkatsu spot where the meat itself is delicious: great meaty aroma, soft texture.

## How I discovered Hets

The temperature of us

There's a story behind how I found Hets. I used to be a Western-style tonkatsu person and had a regular spot. One day I opened the delivery app to order the same thing as always, and it was suddenly closed. So I was hopping between different restaurants trying to figure out where to eat, and I came across a review of Hets. It said tonkatsu paired really well with salt. That got me curious. Tonkatsu and... salt??

That's how I first discovered Hets, two years ago. This time wasn't a case of happening to be in Jeonpo and grabbing katsu — I specifically went all the way to Jeonpo because I was craving Hets after a while.

Hets is a restaurant right at the Jeonpo Intersection bus stop — literally, you get off the bus and it's right there. Naturally the accessibility is great, and it's also a reasonable distance from Seomyeon Station. There are prop shops and select shops nearby too, so it's a good Jeonpo tonkatsu spot to hit when you get hungry while browsing around.

## A bar-seat-centered space, good for solo dining or dates

The interior is clean and tidy. It feels similar to yet different from the Gwangalli branch, so it's fun to look around. Since the tables are mostly bar-style seating, it's totally fine to come alone for a solo meal in Jeonpo, and it also feels cozy and comfortable if you come with a date or friends. The space is fairly large, but if there happens to be a wait, CatchTable reservations make it convenient. (*The Gwangalli branch also does delivery.)

They even take song requests, and the little bits of guidance stuck up like stickers at eye level have a nice personal touch.

## Ordering the Jeju black pork assorted katsu

Hets is a Japanese-style tonkatsu specialist, and I saw that they process the raw meat themselves — Yorkshire, Berkshire, Duroc, and Jeju black pork. Since I've been into black pork lately, I ordered the Jeju black pork assorted katsu.

The side dishes come out first. They have a distinctive kkakdugi (cubed radish kimchi) here. It's mild yet addictive, and it seems like everyone ends up asking for a refill at least once.

It feels like it's packed full of juices. Hets — one of the top Japanese-style tonkatsu spots you'd name in Jeonpo, Busan National University area, Gwangalli, Seomyeon, and beyond.

## Salt, truffle oil, mustard — how I ate it

I like dipping it in this salt the most. That's because the meaty aroma comes through the most this way, and it feels both flavorful and light at the same time. If you sprinkle truffle oil over the salt, I could visit Hets seven times a week.

The lean meat is incredibly tender. The reason I like loin is the right balance of fat and lean meat — the chewy texture of the fat blends well with the softness of the meat. You can even see the grain of the cutlet in the photo. It falls apart in your mouth along that grain.

The soup is also delicious. It's slightly spicy, but not so rich or heavy that it stops you from enjoying the tonkatsu to the last bite — just a bit of a kick.

Honestly, the texture and flavor of the meat at Hets are so good that it's delicious even eaten plain. The meat's aroma and clean flavor are satisfying.

There's mustard off to the side, and it's tasty either mixed into the tonkatsu sauce or dabbed on the cutlet before dipping it in the sauce. The mustard's sharp kick pairs well with the savory meat.

## Loin vs. tenderloin: what's the difference

The tenderloin katsu came out too. The pink-tinged flesh really stands out. It looks packed with juices just from looking at it.

The tenderloin has a lighter feel than the loin — it's mostly lean meat, so it's clean and easy to eat, with a softness that's different from the loin. Eating both side by side really lets you feel the difference. If you're not sure which you prefer, trying the assorted platter once and figuring out your own taste sounds like a good idea. Personally, I'm always loin, no question.

## The same taste, even after all this time

Coming back to Hets in Jeonpo made for a satisfying meal. Even after a long time away, the taste hadn't changed, so I got to enjoy it just as much as before. I'm really grateful for places that don't change even after becoming famous. I hope Hets keeps this exact taste so I can keep coming back.

With its bar-table seating, this works well as a recommended dinner spot for a date in Jeonpo, with friends, or solo. Nothing about the flavors is too intense, so it's a menu kids and elementary schoolers can enjoy too. You can even request songs so the wait doesn't feel boring, and above all, the best part is getting to eat genuinely delicious katsu in Jeonpo, Busan.
