Today I'm bringing you an honest review of Donggyeong Sukseong Chamchi, an aged tuna specialist in Yongsan-dong, Michuhol-gu, Incheon. They use a special aging method so there's zero fishy taste and the umami is genuinely excellent. It's especially known for perfectly thawed tuna with a flawless texture — no tooth-chilling coldness at all — a real aged-tuna gem in Incheon.

We ordered the Royal course for two!

The basic banchan (side dishes) came out right away — octopus salad, vegetable salad, well-fermented kimchi, flying fish roe, and more, all good pairings for the tuna.

Next came broth, black sesame porridge, and yam juice. One spoonful of the porridge and the black sesame aroma hit immediately — perfect for taking the edge off hunger before the tuna arrived.

I expected the yam juice to be sticky, but it was sweet and smooth like condensed milk — no resistance at all, just delicious.

Finally, the main event — the tuna sashimi! Gleaming and vivid in color, the aged tuna showed off its signature soft, non-tooth-chilling texture and deep flavor. The owner kindly recommended which sauce and pairing suited each cut.

Wrapped in seaweed with well-fermented kimchi, it cut through the richness perfectly — an amazing combination.

By the way, there's plenty of seaweed right next to the utensil holder, so you can help yourself as much as you like.

Next came corn kernels, udon, shrimp sushi, and fried ginkgo nuts. Right around when things started feeling rich, these came in to balance it out perfectly.

Next up were belly and head meat!

Right as things started to feel rich again, out came shrimp soy sauce sushi, braised tuna, grilled tuna, and crispy fritters,

followed by a spicy fish stew in an earthenware pot. The broth was refreshing and the tuna inside was so tender — the perfect way to cleanse the palate.

## Bluefin and tail meat, then flying fish roe rice to finish

Next came the bluefin meat, with a deep, rich, nutty tuna flavor.

They even brought out the tail meat at the end, generously. We didn't have to ask for more — it just kept coming, and by the end it felt like we'd eaten an entire tuna.

For dessert, we finished cleanly with flying fish roe rice, with its little popping texture, and maki rolls.
