✔️ We started with suyuk-bossam and spicy stir-fried octopus.

## How was the suyuk-bossam?

![Suyuk-bossam (250g) served over chives](https://img.superchart.com/images/dasun-kalguksu-gyodae-suyuk-nakji/dasun-kalguksu-gyodae-suyuk-nakji-05-1ufrk-846.webp)

The suyuk-bossam came out looking appetizing, with sliced pork laid over chives. It was placed on a burner, so it stayed warm until we finished it.

The ratio of lean meat to fat was good, making it soft and moist. It had no gamy smell and was mild enough to eat on its own.

Pairing the warm meat with chives and spicy pickled radish added a nice crunch. It was also great wrapped in lettuce with pork, garlic, and pickled radish together.

## How spicy is the stir-fried octopus?

As soon as the spicy stir-fried octopus hit the table, the spicy sauce smell hit first. The octopus wasn't chewy in a tough way — it was springy — and the sauce was evenly coated rather than sitting on top.

True to its name, it had real heat, but it wasn't a one-note spicy dish. There was a slight sweetness and savory depth that kept me reaching for more. The spice level felt about like Shin Ramyun to me, which was just right. If you can't handle spicy food well, I'd suggest pacing yourself and tasting a little at a time.

## How did the suyuk-bossam and spicy octopus combo work?

If it's hard to pick just one, ordering both together is a good move. The suyuk-bossam was soft and mild, and the spicy octopus stir-fry was hot with a strong sauce flavor — they complemented each other well.

Eating a piece of pork followed by some spicy octopus brought out the meat's savoriness alongside the octopus's heat really nicely. With such a hearty spread, it was also nice not having to order a meal and snacks separately when visiting as a group.

To finish, we had cham-daseon kalguksu, made with a broth of seafood and vegetables. The clam broth was refreshing yet clean, and the addition of seaweed flakes and green onion made it savory.

The noodles were soft yet chewy. It made a satisfying finish after the suyuk-bossam and spicy stir-fried octopus.
