A huge rib bone, large enough to take up half the bowl, comes laid right on top. The visual impact alone is seriously impressive.

Just lightly holding the bone with chopsticks made the meat slide right off, and I could tell it had been carefully simmered for a long time. Bite into the thick meat and there is none of that dry texture at all; it chews so tenderly, while sweet yet clean-tasting juices spread moistly across the mouth.

No matter how wonderful the main dish is, it is disappointing when the accompanying side dishes fall short—but Guksuhwa had even the basic sides absolutely spot-on.

### Crisp, freshly made geotjeori kimchi

The geotjeori (fresh kimchi), thoroughly coated in a spicy-sweet, cool and pleasantly sharp seasoning, is a perfect match for the tender rib meat. Place a little geotjeori on a piece of meat and it cuts through any richness completely, making you want to keep eating without end.
