They use organic flour, natural sourdough starter, AOP-certified butter, and antibiotic-free eggs, letting the dough ferment at low temperature for at least 18 hours before baking fresh every day. Maybe because of all the good ingredients they don't skimp on, my stomach felt light and comfortable after eating, and the flavor lingered in my mouth in a way that felt different.
