Every dish looked so delicious in the photos that we spent quite a while deciding. But there was even more important information that grabbed my attention! Menya Seoul’s special touch lies in these sauces. - Lemon kelp vinegar: A spoonful in cold ramen or mazesoba is said to bring out the umami and acidity. - Rayu (chili oil): Adding it to mazesoba or spicy ramen is said to add a spicy flavor. At last, our order came out! The noodles were not overly soft, with just the right firm yet chewy texture, and they went well with the deep, light mild broth. Its special sweet-and-salty seasoning had soaked deeply into the meat, giving it a wonderful texture that seemed to melt away the moment it entered my mouth. When I lightly lifted a thin slice with my chopsticks, its freshness and tender texture came through immediately. There was none of the usual meat odor, and the lean meat was very soft; rolling the chashu around the noodles and eating it in one bite gave a wonderfully mouth-filling texture.
