My husband and I happened to have a weekday off together, so we took a drive to Songdo for the first time in a while. We really wanted fresh, delicious sushi, and after searching hard, we ended up at Sushi Doku, which had especially great reviews.

## Sushi Doku The Songdo basics and parking

Sushi Doku The Songdo (스시도쿠 더송도) is on the second floor of Onesta Mall at 157 Songdogukje-daero, Yeonsu-gu, Incheon. It is open from 11 a.m. to 9 p.m., and parking at Onesta Mall is validated for up to two hours. We parked in the mall's underground lot and headed up to the second floor.

## A weekday visit and tablet ordering

Even before we went inside, the neat, modern exterior caught my eye. You can register for the waitlist through Catchtable in front of the restaurant. We arrived around 11:30 on a quiet weekday morning and were able to walk straight in with no wait.

You can order from the tablet at each table. As we looked through the menu at our own pace, we ordered two premium sushi special sets, which looked like the most substantial option. Along with 10 pieces of sushi, it is a full-course set with udon, salad, fried items, and chawanmushi (steamed egg custard), so I was excited.

While we waited for our food, I opened the chopstick sleeve(?) that had been set out for us. It came with chopsticks and a brush, so we could brush soy sauce evenly over the sushi.

## Starters and service that arrived before we asked

Our food came out shortly after we ordered. The whole set—chawanmushi with a gentle truffle aroma, tangy salad, karaage (Japanese fried chicken), shrimp tempura, and udon—was beautifully arranged on a tray with lovely color. The rakkyo (pickled scallions) was also so good with the meal, and the staff noticed our plate was getting empty and brought more before we even asked. That attentive, friendly service made us feel even better.

## The premium sushi special set with generous neta

Then we tried the main sushi. The varied 10-piece selection included flounder, red sea bream, salmon, ika (squid), sweet shrimp, akami lean tuna, red shrimp, red crab meat, eel, and ankimo (monkfish liver). I was excited because it had been a while since I'd had sushi, but the instant it hit my mouth, I automatically said, “This is really delicious.” It was easily the best quality sushi I have had recently.

Above all, the amount of shari (sushi rice) was just right, while the fish on top, or neta, was large and long, giving such a satisfying mouthful. There was no fishiness at all—just clean, fresh flavor—so I really loved how fresh it tasted.

At first, I wondered whether 10 pieces might not be enough. But the neta itself was so large, and with the udon, karaage, shrimp tempura, chawanmushi, and salad alongside it, it was much more filling than I expected. In the end, I was so full that I could not finish and passed some to my husband. It was truly generous, enough to satisfy even people with big appetites.

I also had bites of the karaage here and there, and the nutty sauce went with it so well. It was really delicious.

The chawanmushi (steamed egg custard) was even better because it was full of truffle aroma.

Brush it on lightly and eat—it has just the right savory saltiness. Approved!

## Crisp yet moist tamago katsu

The tamago katsu we ordered as an extra was also a real treat. It is the sweet, soft egg normally used on tamago sushi, fried until crisp. It was my first time trying fried rolled egg, so it felt wonderfully new. Dipped in the sauce served alongside it, the outside was crisp while the inside was moist and tender—a special dish I kept reaching for.

When we went to pay after the meal, I noticed that mouthwash and dental floss were thoughtfully stocked at the counter. The owner's sense of care, right through the final moments of the meal, let us leave the restaurant feeling great.
