A medium jokbal with jaengban guksu (cold noodles on a platter) came with baek-kimchi, cabbage, pickled radish wraps, dried radish strips, lettuce and even tteok-manduguk as free side dishes, and the meat was so clean-tasting and tender that even the skin felt light rather than greasy.
