I often use eggs when preparing side dishes for my children. This time, I made gyeran-mari (Korean rolled omelet) and soft-boiled eggs with Fresh Farmer eggs I discovered at Olympic Park Foreon. I usually look mainly at yolk color or the shell, but this time I also checked the final digit of the egg shell code.

## How do you find the store from Dunchon-dong Station?

Fresh Farmer Olympic Park Foreon Direct Store (프레시파머 올림픽파크 포레온 직영점) is on B1 of the Foreon Station 5 mall, which is connected to Dunchon-dong Station on Line 5. There were many stores in the mall, but I could find it toward the center of B1. The address listed on the map is B122, B1, Park Foreon, 1360 Yangjae-daero, Gangdong-gu, Seoul, South Korea.

At the time of my visit, the store was described as an unattended shop open 24 hours a day, year-round. You can also use the Foreon Station 5 mall parking lot.

## What kinds of eggs does Fresh Farmer sell?

It was introduced as a place specializing in producing and selling organic, free-range, animal-welfare fertilized eggs. What caught my attention was the information saying it sells only eggs whose shell codes end in 1 or 2, and does not sell eggs ending in 3 or 4.

I liked the explanation that eggs are supplied directly from the farms to the stores without an intermediate distribution stage, with head-office staff managing the stores and small quantities delivered at a time.

## What changed after checking egg shell codes?

While choosing eggs this time, I read that the final digit of the shell code indicates the rearing environment. The original post categorized them as: 1, free range; 2, barn floor-raised; 3, enriched cage; and 4, conventional cage.

Compared with eggs I had at home that ended in 4, the Fresh Farmer eggs seemed to have clearer whites and yolks that felt firmer and rounder.

Since my children eat them, I have usually been willing to choose pricier eggs. But I was surprised to see that the eggs at home ended in 4. I knew shell codes existed, but I had not looked closely at the last digit when buying eggs.

## How was the egg roll for my children?

I made a rolled omelet with three eggs and chopped paprika. I did not add salt or any other seasoning.

Perhaps because it was nutty and soft, my children ate it well. I rolled it into a large omelet, and both children reached for it over the other side dishes and finished it all. It felt worthwhile preparing the side dish when they said it was tasty and ate it.

Although I check whether vegetables and meat are organic, I had mainly chosen eggs based on the brand or yolk color. This experience gave me one more thing to look for when buying eggs.

## How did the soft-boiled eggs taste?

I also boiled them soft. To my taste, they had no eggy smell, and they were clean-tasting and nutty even without dipping them in salt. I also liked their moist yet springy texture.
