I went to Seongsu, which is hot right now, partly to use the Olive Young Members Lounge too. (Sad story: the lounge had a 3-hour wait, so we never made it in.) Today's lunch was gyukatsu — at Gyuen Dang Seongsu Main Branch.

## Where is Gyuen Dang Seongsu Main Branch? Up on the second floor

Gyuen Dang Seongsu Main Branch is on the 2nd floor of the building at 10 Yeonmujang 7-gagil. Right next door is Betong, a salt bread spot everyone loves, and the 1st floor has a taco chain called GotIt — go up to the 2nd floor and there's Gyuen Dang.

## Waiting and seating at Gyuen Dang: is a reservation a must?

There was a wait when we visited, but thanks to booking ahead on Naver, we got seated right away. Inside, there are seats tucked into every corner. Even spots that look like they couldn't possibly fit a table — turns out there's a table there. Great use of space. If you're going, I'd recommend booking ahead on Naver.

## Tenderloin gyukatsu for 24,000 won, plus a mini okonomiyaki review event

We ordered two tenderloin gyukatsu (₩24,000 each). Apparently if you take part in the Naver or Google review event, they give you a mini okonomiyaki?! I took a photo of the sign but didn't read it closely, so I only found this out just now writing this... Everyone else, write your review and enjoy some tasty okonomiyaki with a beer.

If there'd been more of us, we could've tried the omurice too — a little disappointing since it was just the two of us. The brie cheese omurice looks like it'd be delicious. I love brie cheese (...?). But then choosing omurice and splitting a single tenderloin gyukatsu felt like too much of a loss — I wanted to eat my fill of gyukatsu.

There it is, my gyukatsu. Haven't had gyukatsu in a while. Such a gorgeous color.

## Before you grill: letting the tabletop brazier heat up

I was hungry so I wanted to grill it fast, but when I put the meat on too soon, nothing cooked. The next table was sizzling away while ours stayed completely silent. Took the meat back off. While waiting for the brazier to heat up, I looked around — friends hanging out, couples on dates, families at other tables too. Seems like a great Seongsu Station lunch spot, and also a good pick for a Japanese food date in Seongsu — a proper Seongsu gyukatsu restaurant.

### What is the tastiest doneness for tenderloin gyukatsu?

After waiting a bit and putting it back on, it started sizzling and cooking. I figured since it's beef, cooking it just a little would be enough, but actually grilling it fairly long, until nicely browned, turned out to be the tastiest.

The piece I cooked less had a browned outside but was almost raw inside, kind of like eating grilled yukhoe (beef tartare). Of course it's tasty no matter how you eat it — how could it not be. But for my taste, the doneness that worked best was crispy on the outside. Find that sweet spot where the outside is crispy but the inside stays juicy.

We were happily eating away when suddenly the brazier flame shot up, haha. The next table was whispering about it.

## Gyukatsu grilled in Isigny butter

Anyway, after eating a few pieces plain, we grilled the rest in the Isigny butter they give you. This was my first time seeing a gyukatsu place offer butter. At least none of the gyukatsu places I've been to before gave you butter. Thinking about it, when you grill steak, don't you toss in rosemary at the end and baste it with melting butter? Grilling in butter has to make it even tastier.

Following the "how to eat gyukatsu" card on the table before the food arrived, I put two pieces of gyukatsu on the grill and tucked a quarter piece of butter between them — once it started grilling in the butter, this incredible savory smell came off it.

### Is gyukatsu good without butter, and how does the house sauce taste?

It's not just my imagination — grilling in butter makes it noticeably more golden brown. The gyukatsu itself is savory enough that you don't strictly need the butter; if you don't like things too greasy, grilling it plain is plenty satisfying too. But for me it wasn't really about a taste difference — I just loved the smell of the butter grilling, so I kept using it. And while it's tasty dipped plain in just wasabi and salt, the sauce they give you really pairs beautifully with the gyukatsu. It's a mildly sweet-and-tangy sauce that keeps you eating piece after piece of what could otherwise get a little heavy.

## Salad and wasabi refills, and finishing the rice at Gyuen Dang

Eating it all went by in a flash. We refilled the salad, refilled the wasabi once more, and cleaned up the miso soup and rice completely. It'd been a while since I'd had gyukatsu, and this place was so good it put me in a great mood. While paying, I apparently started doing a little shoulder dance without realizing it, and my friend next to me said,

> "...? Are you dancing right now?"

That's just how good it was.

That fluffy omurice at another table looked so cute I quickly snapped a photo of Gyuen Dang's omurice. Next time I'll order the brie cheese omurice. If you're looking for a place for lunch near Seongsu Station, highly recommend.
