Walking into Eonyang Dak Kalguksu Incheon Songdo Branch, sunlight pours in through the large windows. The clean, well-kept interior greets you as soon as you step in.

After placing our order, one particular notice caught my eye — it made clear this is a very different approach from places that pre-boil noodles and just reheat them.

A single ₩11,000 bowl of dak kalguksu contains half a chicken, cleaned and left whole. The table was finally set, and the first thing that caught my eye was the dak kalguksu in a large stainless steel bowl.

Lifting up a chopstick-full of noodles, the thick, plump strands come right along with it. Since they're freshly boiled, the chewiness is clearly still alive. The broth carries a deep savoriness from long-simmered chicken, but it goes down clean rather than greasy.

This restaurant's real strength shows once you dig through the broth. Half a chicken sits in there, cleaned but otherwise whole — legs, wings, and body meat all intact, so much so that I had to fish it out and move it to a separate bowl.

The meat was cooked through so thoroughly that it pulled apart along the grain with just a light touch of the chopsticks. Yet it wasn't dry at all — still moist. For a single bowl of kalguksu, it's hard to imagine a better lunch option in Songdo, Incheon.

## Dak gomtang served with a bowl of rice

Dak gomtang is also ₩11,000, and instead of noodles, it comes with a bowl of rice, so you can enjoy it like a soup-and-rice meal. The dak gomtang we ordered alongside was just as hearty.

Just like the kalguksu, it's loaded with big chunks of chicken and plenty of green onion, making the broth even more refreshing. For anyone who finds noodles too heavy, or who needs rice with their meal, this option fits better.

## Chewy mandu that lives up to its name

The chewy mandu (dumplings) we ordered as a side comes eight pieces for ₩6,000.

True to the name, the dumpling skin is thin yet chewy. Even when picked up with chopsticks, it holds together without tearing.

There are three options: danmuji (pickled radish), kimchi, and spicy kimchi. The kimchi here was genuinely impressive — properly fermented, crunchy, and full of savory depth.

There was even a sign posted in the restaurant about it — suggesting that if you like a spicier flavor, add kimchi and kimchi seasoning to your kalguksu. I actually tried adding kimchi to the broth, and it instantly turned bright and refreshing. In the end, I finished off every last drop of the broth.
