It feels a little cooler these days but it's still hot in the afternoons. The heat had me craving naengmyeon (cold buckwheat noodles), so I went to Song Giwon Jinju Naengmyeon Main Branch, a famous name in Jinju naengmyeon. There are plenty of great Jinju naengmyeon spots, but this one was even featured on the TV show Jeon Hyun-moo's Plan.

My eyes went straight to the huge banner hanging on the building. A broth theft crime?.. Apparently in 1997 someone actually stole Song Giwon's broth. Wild, honestly.

## How long is the weekend lunch wait?

At Song Giwon Jinju Naengmyeon Main Branch we registered on the Tableling waitlist for weekend lunch and waited about 20 minutes before getting seated. It's always packed here so I was a little worried, and sure enough there was a wait. First thing to do when you arrive: register on Tableling! For people who can't check their phones while waiting, they even call out numbers over a mic.

There's plenty of parking in front so you can wait in the car, and since turnover is fast, our turn came around sooner than expected.

Inside, the place is clean and tidy, and I thought it was kind of cool that there's a giant shared table in the middle like something you'd see in a café.

Song Giwon Jinju Naengmyeon is known for simmering domestic Korean beef bones for a rich meaty base, combined with clean Namhae seafood and various medicinal herbs, all boiled together for over 24 hours for a savory ratio, then using Jeju buckwheat dough that's carefully roasted. Local ingredients plus real care — nothing but delicious!!!

## The stories behind Song Giwon's naengmyeon names

Before we even sat down, they handed us the menu. We ordered Sunjo, Nongae, Song Giwon, and ujeon together. When you go to a good restaurant with a group, you've got to order one of everything, right? 'Just one bite~' Classic 👍🏻 haha

- 🏷️ Sunjo 1800 (mul naengmyeon): a cold noodle style enjoyed by King Sunjo of the late Joseon dynasty in 1800
- 🏷️ Nongae 1593 (bibim naengmyeon): made in memory of Nongae, who fought to the end during the Second Siege of Jinju in 1593 and died a martyr's death at Uiam Rock when Jinju Fortress fell
- 🏷️ Song Giwon 1997 (seokkeum naengmyeon): made with the seafood broth chef Song Giwon developed himself in 1997
- 🏷️ Ujeon: Song Giwon's signature beef pancake, made from carefully trimmed and aged domestic Korean beef coated in 100% domestic buckwheat flour and smoothly strained egg, then pan-fried until golden

The hot broth is salty, warms you right up, and the savory flavor is out of this world. You can even refill it at the self-serve corner. My family drank a whopping three cups each (putting that broth-theft incident into practice, haha).

It comes out fresh off the pan, piping hot with a nutty aroma wafting everywhere. Thick, tender domestic beef comes coated in a delicate layer of egg, and it melts in your mouth the moment you bite in. It's already delicious on its own, but paired with the bibim naengmyeon or mul-bibim naengmyeon it's an amazing combo.

A bibim naengmyeon where the savory flavor of the special sauce fills your mouth. Not aggressively spicy — instead it's mildly spicy, balanced with a natural fruity sweetness and nutty sesame oil aroma. Wrapped together with the ujeon garnish on top, the balance of spicy and nutty was perfect.

### Song Giwon (seokkeum naengmyeon)

A dish where the refreshing broth of mul naengmyeon and the spicy sauce of bibim naengmyeon meet in a golden ratio. This is the one I'd recommend most when you can't decide between mul and bibim — thanks to the light broth, you can enjoy it spicy-and-tangy and moist right to the last bite. Word is Jeon Hyun-moo's Plan also raved about this Song Giwon naengmyeon 👍🏻👍🏻

## Why a Jinju local recommends this place again

It was a satisfying enough meal that the wait didn't feel wasted at all. As a Jinju local who's eaten countless bowls of Jinju naengmyeon, I really loved how clean and light Song Giwon's flavor is. Even outside of hot summer, if you're planning a Jinju trip, a great Jinju naengmyeon restaurant is a must-visit. If you want to taste the deep flavor unique to traditional Jinju seafood broth, I recommend visiting Song Giwon Jinju Naengmyeon, with its long history!
