We're a food-travel couple blogger duo with pretty different tastes from each other — we eat everywhere ourselves, judge it honestly, and only write up the places we'd actually go back to. We're always hopping around Korea and Asia chasing good food, and two months ago we had some urgent business in Jeju, so we booked short stays in Seogwipo and Jeju City and ran around busily seeing and eating everything we could.

Today's spot is one we'd bookmarked as a Jeju City raw galbi (fresh, unmarinated short rib) and pork galbi restaurant since before Covid — it was near our accommodation, so we booked a table the day before and headed to this Nohyeong-dong spot, Jeju Boncham Sutbul Galbi (제주본참숯불갈비).

The basic side dishes included lettuce wraps, steamed egg, pickled perilla leaves, salad, seasoned bean sprouts, aged kimchi, and fresh kimchi.

## Why raw galbi and marinated pork galbi get separate grills

The raw galbi came out first. They told us our marinated pork galbi order would be grilled separately on its own plate, right beside our table.

The staff handle the grilling themselves, so all we had to do was wait for it to come out nicely browned.

## What's in the samhap special: deodeok root, scallop and shrimp

The samhap special (a combo platter of three ingredients) came with grilled deodeok (a mountain root with a bittersweet, ginseng-like flavor), scallop, shrimp, and cherry tomatoes that turned out delicious grilled too.

The grilled deodeok gets placed at the cooler edge of the grill, but since it's coated in sauce it can still burn, so you need to flip it often.

Delicious food like this needs drinks to go with it!! They mixed us a nice somaek (soju-beer cocktail) too, first in a while~

Even after it's cooked through, they keep smoking it a bit longer so it soaks up more of that charcoal aroma.

### How does the raw galbi taste?

We started with the raw galbi first!! The meat-to-fat ratio was just right, and it must have been fresh, because the juices burst the moment it hit our mouths — we actually applauded!!

The clean-tasting scallop, savory raw galbi, and fragrant deodeok combo worked so much better together than we expected, so we kept eating them as a trio.

The shrimp, grilled crisp over the charcoal, was nothing short of amazing.

The marinated pork galbi being grilled separately near the kitchen was handled carefully by the staff so it wouldn't burn.

### Marinated pork galbi and mul naengmyeon to finish

Ahh~ the pork galbi finally arrived. Can you see that visual? Glossy and shiny~~~

The tender pork galbi was mildly sweet with a sauce that wasn't too strong, the kind of flavor pretty much anyone would like.

We also ordered mul naengmyeon (cold noodle soup), which pairs perfectly with pork galbi.
