I went for breakfast at Hyeopjae On Ttukbaegi, five minutes from Hyeopjae Beach. Since it opens at 8am, it was the perfect spot for a morning meal. The storefront on the first floor of the building stood out right away.

The name bomal haejangguk might make you expect a thick, heavy seafood broth, but what struck me was how clear it was — and yet still spicy and refreshing. The broth was cool and light, with a clean finish carried by the sea snail's distinctive savory flavor. For anyone who likes that particular sea snail aroma, this had genuine Jeju flavor without being overpoweringly fishy.

And Hyeopjae On Ttukbaegi's bomal haejangguk wasn't just light — cheongyang chili and other seasonings gave it real spice. The clear, clean broth held sea snails, shrimp, chives, and cheongyang chili for a cool yet spicy flavor. It's more cool-and-spicy than fiery, so if you actually want a fiery kick, dishes like abalone soondubu (soft tofu stew) are the better pick — but if you prefer a refreshing broth, this bomal haejangguk is the one to go for.

Along with the sea snails, shrimp, bean sprouts, and chives went in, and there were plenty of bean sprouts, which added to that cool, refreshing feel. The clear, light broth mixed well with rice, keeping the seasoning from feeling too heavy while still making for a filling breakfast.

Simmered from hanwoo bones, the broth was deep and rich. The special dadegi was the real hook here — the base was already a rich, seasoned broth, but you could add minced garlic or extra sauce to adjust it to your own taste.

The bowl was packed full of ingredients — a generous portion. The tripe had absolutely no off-flavor, and the meat was soft and savory; both the tripe and meat were chewy yet tender, making them easy to eat.
