## In short

Oreumak Garden Jungmun Main Branch is a 40-year-old Jeju black pork restaurant on Daepo-jungang-ro in Jungmun, Seogwipo. The blogger ordered the dry-aged black pork half-portion (480g of pork jowl, pork neck, and bone-in loin/pork tomahawk, wet-aged then dry-aged) plus one order of seasoned ribs, with staff slicing the thick tomahawk tableside. Holder of both a Blue Ribbon and a Red Ribbon award, it's a genuine local favorite for properly aged meat.

Today's post is about my visit to Oreumak Garden Jungmun Main Branch, a place famous for black pork in Seogwipo. When you go to Jeju, you can't help wanting to properly enjoy some good meat.

Oreumak Garden does a first-stage low-temperature wet aging followed by a second-stage dry aging. What caught my eye first when I arrived was that it's a 40-year-old Jeju black pork specialist. When a place has kept people coming back for that long, it's usually the real deal haha!!

The cozy, neighborhood-y scenery around the restaurant looked even better with the exterior lights sparkling as the sun went down. There's also a big parking lot beside the building.

## A spacious, clean hall, mostly filled with locals

Inside is a spacious, clean hall, and there were also private rooms. Rather than flashy interior design, it's kept tidy and well-managed the way a long-running restaurant should be, which made it comfortable to eat in. Most of the other diners were locals.

### Blue Ribbon and Red Ribbon both

The walls are covered with Blue Ribbon Survey stickers, proof that this place's taste has been consistently recognized over a long time. Even more special, it's also earned a 'Red Ribbon' — a collaboration between Coca-Cola and Blue Ribbon selecting restaurants nationwide that pair especially well with Coca-Cola. 👍 If you're looking for a black pork restaurant in Jeju that can't go wrong, I'd recommend Oreumak Garden without hesitation — it's been proven twice over by Blue Ribbon and Red Ribbon!

One wall is packed with signatures and traces of the many celebrities who've visited, side by side. Actor Ryu Seung-ryong and many other celebrities have stopped by, which is a sign of how word-of-mouth famous this place is — it made my expectations for the food climb even higher^^

## The menu board and the aging explanation

On the menu board, the signature black pork dry-aging set (bone-in loin + neck + jowl) is listed alongside various other cuts and set meals like black pork belly, raw ribs, and seasoned ribs, all neatly organized.

One wall has a friendly explanation of the aging methods (dry aging / wet aging) that are the secret to this place's flavor. Dry aging, it explains, is done at a constant temperature, humidity, and airflow, softening the texture of the meat and boosting its rich umami. Wet aging, meanwhile, is done vacuum-sealed at a set temperature, preserving the juices and keeping the texture tender.

First wet aging, then dry aging. Knowing the meat went through such a careful aging process only raised my expectations when ordering. 👍

## Low-temperature aging and dry aging

There's a special space toward the back of the restaurant. It shows the meat going through the dry-aging process — low-temperature aging followed by drying, which they say was the first of its kind on Jeju Island. First, wet aging.

![Vacuum-packed black pork undergoing first-stage wet aging](https://img.superchart.com/images/oreumak-garden-jungmun-dry-aging-black-pork/oreumak-garden-jungmun-dry-aging-black-pork-12-1a35m-900.webp)

Then, dry aging. In the dry-aging process, they say jowl is aged 5 days and cuts like loin about 10 days at low temperature before being dried.

The sight of all that time and care was striking. With such systematic aging, how could the flavor not be worth looking forward to?

## Side dishes, melddeok-jorim, and garlic butter shrimp beside the grill

Once we sat down, a whole spread of side dishes filled the table.

The sweet and tangy side dishes looked perfect to pair with the meat, and a rolled egg is always a yes! There was also crunchy kimchi, sliced scallions, and a savory perilla-seed-stir-fried bamboo shoots side.

Fresh lettuce wraps, a bubbling egg custard (gyeranjjim), and melddeok-jorim (braised anchovy sauce) arrived one after another. The melddeok-jorim is great for dipping the meat in, and just as good mixed into rice. Black pork restaurants used to almost always serve fermented anchovy sauce (melljeot) on the side, but these days a braised version like this is common too.

There was clean salt to dip the meat in, and shrimp and garlic sizzling away right next to it on the grill! Once cooked through, the shrimp tasted like garlic butter shrimp^^ A magical combination that doubles the savoriness.

## Dry-aged black pork half-portion, 480g

Finally, the main dish I ordered arrived: the dry-aged black pork half-portion (480g). Just the sight of it — the color, the thickness — made me gasp. ⬇️ Black pork jowl + black pork neck + black pork bone-in loin.

![Black pork jowl, neck, and bone-in loin half-portion, 480g](https://img.superchart.com/images/oreumak-garden-jungmun-dry-aging-black-pork/oreumak-garden-jungmun-dry-aging-black-pork-19-19tvm-1200.webp)

The black pork bone-in loin is usually called a pork tomahawk.

Taking a bite of the meat once it had browned nicely on the grill, the juices burst out immediately. I understood with my whole body why this place is a well-known local favorite in Seogwipo.

The owner and staff came by regularly to check on the meat. They especially helped out cutting the black pork bone-in loin (tomahawk), since it's hard to slice. Thanks to that, the meat cooked evenly to a nice golden brown.

I also peeled and tried the shrimp that had cooked nicely alongside the garlic beside the grill, savory and browned. Fresh shrimp, plump and bouncy~ garlic butter shrimp 👍

Dipping it into the salty seasoning salt brought out the meat's own flavor even more vividly. The very first bite has to be with salt, no question ㅎ

This time I piled kimchi on top and popped it in my mouth. The crisp, refreshing kimchi cut right through the fattiness of the meat.

Thanks to the thickness, the more I chewed, the more the rich savoriness seemed to overflow. It was addictive enough that my chopsticks never stopped moving. And you can't skip pairing it generously with sweet-and-tangy scallion salad either.

## The seasoned ribs we ordered extra

This place's meat is delicious! It made me want to try other menu items too. So before the momentum died down, we added an order of seasoned ribs.

![An extra order of seasoned ribs](https://img.superchart.com/images/oreumak-garden-jungmun-dry-aging-black-pork/oreumak-garden-jungmun-dry-aging-black-pork-23-1quls-900.webp)

The seasoned ribs, grilled to a nice bite-sized doneness, had a sweet and salty marinade soaked deep into the meat. Watching it sizzle and glisten on the grill looked absolutely delicious. We grilled every last bit of meat until it was evenly golden and enjoyed every single piece.

![Seasoned ribs piled on white rice](https://img.superchart.com/images/oreumak-garden-jungmun-dry-aging-black-pork/oreumak-garden-jungmun-dry-aging-black-pork-24-688yb-900.webp)

I piled the sweet seasoned ribs right onto a bowl of white rice and ate it in one bite. Meat with rice really never fails.

### A turtle raised for over 10 years

Oreumak Garden has a special resident: a turtle they've apparently raised for over 10 years. It moved slowly, lifted its head, and it almost felt like it was making eye contact with me^^

## Overall thoughts

What stuck with me most from this visit was the deep, rich flavor of meat perfected over a long history. As a restaurant passed down through generations and a Red Ribbon winner, its solid experience really came through. For anyone who wants to properly enjoy high-quality aged meat, I'd recommend it without hesitation as a local favorite in Seogwipo. After tasting how good the food is and seeing how popular it is with locals, I'll definitely be back the next time I'm on Jeju!
