For fresh ribs, they recommend wrapping with shrimp sesame oil sauce and water dropwort, dipped in fermented shrimp sauce; for marinated ribs, pairing with baek-kimchi (white kimchi) and wild garlic wasabi is supposed to be delicious. They also say a piece of marinated rib on top of the suhyangmi rice is great. Fresh ribs are good too, of course, but for pork ribs, the marinade somehow feels like the truth, so we went with marinated. With barley shrimp mixed in, it was clean and refreshing, so my chopsticks kept going back to it while eating meat. The tofu was left uncut in one big piece — rustic but appealing. But Gilchon Sutbul Galbi has enough going for it — value, great side dishes, a marinade that isn't too sweet, cold draft beer, good atmosphere — that I'd want to come back even without table-side grilling. My one complaint: since I don't eat fat at all, I wish there had been more lean meat. 🥲 Dipping the meat in shrimp sesame oil sauce and pickled onions, yum yum yum ;) Grilled to a nice golden brown, the meat was tender and the marinade — aged in secret soy sauce — soaked in well.
