## In short

Seosan Dongjuk Kalguksu is a Korean restaurant specialising in dongjuk (surf clam) kalguksu, knife-cut noodle soup, on Deokjeong-ro 201beon-gil in Jangyu, Gimhae, Gyeongnam. On a day with no appetite, the writer and her husband shared two bowls at Seosan Dongjuk Kalguksu and found the clam meat surprisingly plump and the broth cool and clean rather than sharp. A cooler of free ice water for passing walkers outside the door made Seosan Dongjuk Kalguksu memorable for its kindness as much as its food.

I hadn't had much of an appetite lately, so my husband and I went out for kalguksu (knife-cut noodle soup). This time we visited Seosan Dongjuk Kalguksu, a place known for its kalguksu packed with dongjuk (surf clams).

## Finding Seosan Dongjuk Kalguksu in Jangyu, Gimhae

Seosan Dongjuk Kalguksu sits on Deokjeong-ro 201beon-gil in Jangyu, Gimhae. As soon as we arrived, the sign was easy to spot, so we had no trouble finding it. Inside, everything was neatly arranged and the atmosphere felt relaxed and comfortable for a meal.

One thing that caught my eye was a sign that read 'made same day, discarded same day.' Knowing they stick to using only what's prepared that day naturally made me look at the place a bit differently.

## What's on the self-serve side dish corner?

The side dishes at Seosan Dongjuk Kalguksu were set up in a separate self-serve corner. There was kimchi and kkakdugi, along with cheongyang chili and doenjang, so we just scooped out as much as we wanted.

Eating kalguksu without kimchi always feels a little lacking, right? We grabbed some kimchi and kkakdugi and waited for our kalguksu to arrive.

## How much dongjuk clam is in the kalguksu?

When the kalguksu finally arrived, the bowl itself was impressively large. The clear broth was full of noodles and vegetables, topped with crown daisy leaves, and it looked delicious the moment it landed on the table.

What really stood out was the dongjuk. It wasn't just shells with nothing inside — fishing them out one by one, the clam meat was actually quite plump.

Thanks to the dongjuk, the broth had a clean, refreshing taste that really came through. It wasn't heavily seasoned or intense — more about enjoying the savory sweetness and coolness that came from the clams. If you're looking for a Jangyu kalguksu restaurant and like clam-based broths, this style is worth trying. There was also something fun about fishing out the dongjuk one by one as we ate.

## Thick knife-cut noodles with a bite of kimchi

The noodles at Seosan Dongjuk Kalguksu weren't too thin — they had a nice thickness that gave that signature kalguksu chew. They were good on their own, but kalguksu really tastes right when eaten with kimchi.

Putting a piece of kimchi on the thick noodles, then taking a sip of the cool broth, was a great combination. It was also convenient that we could grab more kimchi and kkakdugi from the self-serve corner whenever we wanted.

## Free ice water outside for passing walkers

On our way out after finishing our meal, we noticed something just as memorable as the food. There was a big cooler box outside with ice water inside. At first I thought it was for customers, but reading the sign more closely, it was actually meant for people out walking or running, so they wouldn't wear themselves out in the heat.

The sign said to take one bottle per person and just return the empty bottles to the collection bin. It felt like the owner cared not just about the customers, but about anyone passing by, and that warmed my heart a bit. Having a delicious meal is great, but running into an unexpected small kindness like this makes a place stay in your memory a little longer.

## When you want a cool bowl of kalguksu in Jangyu

From the generous amount of dongjuk to the thick noodles and the kimchi that paired so well, my husband and I had a great meal. But what really stuck with me was the ice water we found on our way out — a small sign of the owner's warm heart. We came across Seosan Dongjuk Kalguksu while looking for a Jangyu kalguksu restaurant. On days I'm craving that cool dongjuk broth, I think I'll find myself thinking back to this bowl.

### Overall verdict on Seosan Dongjuk Kalguksu

The generous amount of dongjuk made the meal fun to eat, and the cool, clean broth paired well with the thick noodles. The self-serve corner, where you can take as much kimchi and kkakdugi as you like, was also convenient. But above all, the free ice water we spotted on our way out stayed with me the longest. This was a place where the owner's warm consideration extended beyond customers to anyone out walking or exercising, making it a meal that was good for both the stomach and the mood.
