It had been a while since my last solo trip in Suwon. Today I took a bus to Ingye-dong starting at 10am to eat gukbap at this Suwon City Hall Station favorite, Jeju Eunhuine Haejangguk.

It's in a small commercial building with an outdoor lot and underground parking too, so parking wasn't much of a worry.

## Inside Jeju Eunhuine: the solo seats and the self-serve bar

They open at 10, and even though I got there before 10:30, there were already a fair number of customers. This gukbap spot is good to eat from the morning — I can only imagine how packed it gets by lunchtime.

There are a lot of these solo seats along the wall — I bet a lot of people come here alone on weekday lunches.

All the side dishes are laid out at the self-serve bar, and you can even grab extra rice there. Sometimes one bowl just isn't enough, so this is really nice.

## Only two soups on the menu: haejangguk and tripe soup

This Suwon City Hall Station gukbap spot has just two items — haejangguk and tripe soup. Add in the dombe pork and seasoned tripe salad sides, and that's it — a very simple lineup.

Ordering is done via tablet, where you can choose to leave out the blood cubes or the chili paste.

There was hanchi mulhoe (squid cold noodle soup), apparently a summer-season item — true to the name Jeju Eunhuine Haejangguk, it's made with a Jeju-style broth. I'll have to try it next time I come with someone else.

## Small dombe pork, 13,000 won, eaten at the solo counter

Plenty of tables were open, but since I came to eat solo, I sat at one of the solo seats. The table size is just right for eating alone. Small dombe pork, ₩13,000.

True to the name of this Suwon City Hall Station gukbap spot, Jeju Eunhuine Haejangguk, the side dish is dombe pork, plated neatly on a wooden board-like dish in true Jeju style.

Eating solo doesn't mean you can't go big — order the soup plus a small dombe pork and it's a very filling combo.

From the lean meat to the fat, the colors came out so nicely. This Suwon City Hall Station spot is a gukbap favorite, but the boiled pork is just as good.

The lean meat was savory and moist, but I liked the chewy texture of the fat even more. Properly boiled pork.

## Haejangguk, 12,000 won: blood cubes, beef and glass noodles

This Suwon City Hall Station gukbap style has blood cubes in it, so at first I thought it might just be a blood-cube haejangguk, but—

—it's also packed with beef. I always default to pork gukbap or bone haejangguk, but it's nice to have this style of gukbap every once in a while too.

And underneath, it's full of bean sprouts and glass noodles — so many ingredients there's barely room to add rice.

I dug into the glass noodles first, then dropped in a bowl of rice right away.

With the chili paste mixed in it looks bright red, but it's not too intense. A rich bone broth with just the right amount of spice — perfect for soothing your stomach without any burden.

Minced garlic comes on the side, and like adding kelp vinegar to mazesoba, dropping in the garlic partway through brings out extra umami and a sharp kick.

It had been a while since I'd had blood cubes, and the texture and savory flavor were so comforting.

I topped a bite with a piece of dombe pork too — at that point it basically felt like pork gukbap. The temperature swings are getting bigger now, the kind of season where you have to watch out for colds — and a warm, hearty haejangguk is good to eat anytime, hangover or not.
