I kept thinking about the Eunhuine haejangguk (hangover soup) I had on my last trip to Jeju, so I went to the Suwon Ingye branch of Jeju Eunhuine Haejangguk!

## What kind of place is Jeju Eunhuine Haejangguk Suwon Ingye Branch?

I was looking for somewhere in Suwon that could satisfy a craving for Jeju-style haejangguk and ended up at Eunhuine Haejangguk. It's known as one of the famous haejangguk spots on Jeju Island, so I'd always been curious about it — and I loved that I could try it without going all the way to Jeju, haha. It's often mentioned as one of Jeju's three big haejangguk restaurants, so haejangguk fans have probably heard of it before!

There's a self-serve bar on one side of the restaurant where you can grab as many extra side dishes as you want. Halfway through a bowl of haejangguk you sometimes crave more kkakdugi or chili peppers, and it was nice being able to just help myself without feeling awkward about it. I also liked that rice was available at the self-serve bar — anyone who wants more than the basic serving can just grab extra, which should be great for people with bigger appetites!

Once we sat down, the haejangguk arrived neatly plated together with the basic side dishes. The basic sides were kkakdugi, chili peppers with doenjang (fermented soybean paste), and minced garlic — a perfect combination to go with haejangguk. Kkakdugi is a must-have with any gukbap (soup with rice) or haejangguk, so it was great to have alongside every few bites, and the crunchy chili peppers with the salty doenjang worked really well together too, haha.

## Haejangguk with blood cubes vs. without: does the broth taste different?

Since we went with a friend, one of us ordered haejangguk without blood cubes and the other with. I was curious whether the presence of blood cubes would change the broth's flavor, but once we actually tried it, the difference was smaller than expected. Both bowls had a clean, mild broth with that signature refreshing haejangguk taste, haha. The version with blood cubes would suit people who enjoy their particular texture and flavor, while those who aren't into blood cubes can order without them and eat comfortably. Since the broth taste barely differs between the two, it really just comes down to personal preference.

### What's in the bowl, and when to add the minced garlic

The haejangguk had bean sprouts, glass noodles, napa cabbage, and chili seasoning in it. The bean sprouts gave the broth a refreshing quality, and the glass noodles were great to slurp up along with the soup, haha. The napa cabbage was cooked soft and went well with the broth too. The chili seasoning added a subtle kick overall, but it was more clean-tasting than aggressively spicy.

My personal tip was to not dump in all the minced garlic at once, and taste the broth clean first! Trying the soup before adding the garlic let me appreciate the clean, refreshing flavor of the haejangguk on its own. Then, stirring in the minced garlic around the halfway point added a garlicky aroma and gave the broth a different character. It's the same haejangguk, but the taste before and after adding the garlic changes a bit, so I'd recommend trying it both ways!!

## Final verdict on lunch at Jeju Eunhuine

Overall, this haejangguk left a strong impression of being clean and refreshing rather than heavy or intense, haha. It seems like a great choice for breakfast or when you need something for a hangover, and also solid if you want a hearty meal. If you want to experience the flavor of the famous Jeju Eunhuine Haejangguk without traveling all the way to Jeju, this is worth a visit. It was fun ordering both the version with and without blood cubes to compare, and being able to grab extra side dishes and rice at the self-serve bar was convenient too. This place seems especially well suited to anyone who likes a clean, refreshing broth in their haejangguk!
