We came in the early evening, and there were solo diners as well as people casually enjoying a drink with their meal. We ordered the haejangguk set with dombe pork plus a bowl of naejangtang to sample a variety. With one order per person, rice refills were free, and broth refills were free too. You could also ask to leave out the chili paste (dadaegi) or ox blood (seonji) depending on preference. ## The basic table setting and the dombe pork Every table had chili peppers and ssamjang (soybean paste) set out, which I thought was kind of unusual haha. Fair warning, the peppers are really spicy! On one side, sliced radish kimchi (섞박지) and minced garlic were standing by. The haejangguk had chili paste (dadaegi) mixed in, and the more you stirred, the deeper red the broth turned, taking on that familiar hearty soup look. Inside were beef, ox blood (seonji), bean sprouts, napa cabbage, and even a generous amount of glass noodles. Even if the noodles soaked up a lot of the broth, you could just add more — which made me feel extra reassured. My husband, who's all about the broth, said he'd probably need a refill before eating, but ended up full after one bowl.
