A while back my husband, my mom, and little Chacha and I went to Bubyeokjeong Pyeongyang Mandu in Paju! Mandu (dumpling) hot pot is honestly one of those dishes that works for everyone from kids to grandparents, so it's a go-to for our family meals out.

This time we finally tried the Pyeongyang-style mandu hot pot I'd been wanting, along with bibim makguksu (buckwheat noodles in spicy-sweet sauce). Nothing was too heavy or overseasoned, but every ingredient felt substantial — I get why this place is such a favorite after shopping at the Paju Lotte Outlet. Shopping, then a good meal... pretty clean plan, right?

Bubyeokjeong sits near Paju Unjeong, Heyri Art Village, and the publishing complex, and it's close enough to the popular Paju Lotte Outlet that plenty of people stop by after shopping 🤍 The name itself has a story — the restaurant traces back to Pyeongyang-style mandu that the owners' grandparents, who were originally from Pyeongyang, used to make. Knowing that backstory made the food feel even more meaningful.

Walking in, you get that cozy feeling typical of a Korean restaurant. The interior uses walnut wood, aged timber, and hanji (traditional paper), giving it a warm yet calm atmosphere overall.

The space is fairly spacious, and there's a dedicated area with baby chairs for kids, so visiting with Chacha wasn't uncomfortable at all.

The mandu are handmade, and there's a full glass window so you can watch them being made the whole time!!! Such a fun detail to look forward to. Parking is of course free! If spots run out, you can ask staff for extra guidance, so keep that in mind.

Eating with kids is no trouble here — baby chairs and baby tableware are all fully ready 🤍 There's also a kids' mandu soup, which makes ordering easier when visiting as a family! Bubyeokjeong's Pyeongyang mandu are genuinely packed inside, and yet the seasoning isn't heavy — clean and light, so I kept eating without feeling weighed down....

We ordered the broth mild too, so there was no spicy or overpowering edge — just a clean, deep flavor! Great for the adults and just as good sharing with Chacha.

The braised beef shank was so tender and generously portioned that you could eat as much as you wanted without holding back...🤍 The soft wood ear mushrooms, dipped in the sauce, were delightfully crunchy too.

### Is Bubyeokjeong's Pyeongyang bibim makguksu too plain?

Honestly, the dish I was secretly most excited about was the Pyeongyang bibim makguksu. I worried it might be too plain being Pyeongyang-style, but it actually turned out to be genuinely delicious!

It wasn't sharply spicy or salty, but the sauce had a subtle sweetness and savory depth that kept my chopsticks coming back. The soft noodles blended perfectly with the sauce and just slid right down.... Alternating between the warm, light mandu hot pot and the makguksu in between made for a great combo! If I go back, I'd order the mandu hot pot again for sure, plus the bibim makguksu too.

Finishing it all off by adding kalguksu (knife-cut noodles) to the hot pot made the meal feel truly satisfying... you'll want to eat it right away❣️ And it's not heavy even after you're full, which is another plus.

After finishing our meal, we checked out the showcase near the entrance on our way out. Bubyeokjeong isn't just a dine-in spot — they also sell mealkits and takeout menu items separately. The mandu soup and mandu hot pot were so good I thought I'd want to eat them again at home, so seeing that takeout option available caught my eye 🤍

From misugaru (roasted grain powder drink) to old-school-style puffed rice snacks, there was a generous variety, so it was fun picking through them like dessert! There were plenty of snacks Chacha would love too, so browsing together with her was its own little treat 🤍 After a filling mandu hot pot meal, finishing with old-fashioned snacks and misugaru felt like a proper ending from meal to dessert.

We picked the mild version of the mandu hot pot specifically to share with our toddler, but rather than tasting bland to an adult palate, it stayed light while still letting the ingredients' own flavors come through — I genuinely enjoyed it too. On top of that, the bibim makguksu exceeded expectations! I always assumed 'Pyeongyang food' meant plain and mild by default, but Bubyeokjeong left a strong impression of being delicious even within that lightness.
