From the neatly laid table that looked delicious at first glance to the juices that filled my mouth the moment I took a bite, I’m sharing my honest story of this assorted grilled-meat spread, where I could really appreciate both the clean, thoughtful presentation and the meat itself.

## Sansol Sinnonhyeon near Sinnonhyeon Station

Sansol Sinnonhyeon, a meat restaurant near Sinnonhyeon Station, is only a short walk from the subway, and even its exterior had an upscale feel. The mechanical parking garage at the Designer Hotel across from the restaurant can be used for two hours, though we parked nearby.

When I opened the door and went in, there was that distinctive smell of grilled meat, while the softly falling light made the tables feel cozy. Pets are not allowed at Sansol Sinnonhyeon, so please keep that in mind before visiting.

Inside, there was a separate aging room, and the meat filling it immediately caught my eye. It was enclosed in glass, so it was fascinating to look at the meat aging as I walked past. Knowing it had gone through an aging process built up my anticipation—I became curious about the flavors it would bring out.

## Ordering the assorted meat and rice

After sitting down and looking over the menu, I wanted to try a range of cuts, so I ordered the assorted platter without hesitation. I also added one bowl of rice to share—the carbs that would bring out the meat’s savory flavor.

There were plenty of side dishes too, but when I come across good aged meat, I think the classic combination of a warm-grilled piece of meat on white rice is best. It lets you appreciate the meat’s own flavor and juices even without any accompaniments, so it is always the first way I reach for. Just meat and warm rice made for a thoroughly satisfying meal.

Once our order was in, the banchan (Korean side dishes) arrived. These were not side dishes added simply to fill out the table; they were a substantial selection that cut through the meat’s richness. The fresh seasoned vegetables whetted my appetite.

Then the star of the day, the assorted meat platter, appeared. The thick-cut meat had perfect marbling between bright-red lean meat and snowy-white fat. It looked so fresh and carefully aged that I could tell at a glance.

I topped the meat with white kimchi and wasabi to maximize its flavor.

I also ate it with seasoned lettuce salad, and it created a fantastic balance. There may be no combination quite as substantial and moving as enjoying them together.

With a little Sansol’s special sauce and scallion on top, I enjoyed it with a sharp, clean finish. True to an assorted platter, each cut had a subtly different meat aroma, and the flavors were so natural and harmonious that I cleared the whole platter without a moment of boredom.
