## In short

Yuksam Maeul Nonhyeon Station Main Branch is a cauldron-lid Korean BBQ restaurant about 300 meters from Exit 8 of Nonhyeon Station in Seocho, Seoul. On a Thursday at 7:30pm, two diners grilled the cauldron-lid fresh galbisal (beef short rib meat) at 19,900 won and the cauldron-lid hwangje fresh galbisal at 22,000 won side by side, along with the free river snail and seafood doenjang stew and wrap vegetables that come with any meat order. Of the two cuts, the wider hwangje galbisal was the more tender, and with Yuksam Maeul open until 5am Monday through Saturday, it works for late-night meat plans too.

On the evening of September 18, after work, my boyfriend and I stopped by Yuksam Maeul Nonhyeon Station Main Branch.

![Seated with no wait at 7:30pm at Yuksam Maeul Nonhyeon Station Main Branch](https://img.superchart.com/images/nonhyeon-yuksammaeul-galbisal-comparison/nonhyeon-yuksammaeul-galbisal-comparison-02-yv3br-900.webp)

I figured it'd be packed since it was dinner time, but we got seated with no wait at all. We ordered one fresh galbisal and one ojaesaeng galbisal to compare, and to cut to the chase — the ojaesaeng galbisal won by a landslide for me.

And it wasn't just the meat that stuck with me. The table was piled with fresh wrap vegetables, the abalone-seafood doenjang stew (fermented soybean paste stew) that comes free with any meat order, and the fierce heat of the cauldron-lid grill. Picking up piece after piece, I understood why the name has 'yuksam' (meat-and-wrap) in it.

## Yuksam Maeul Nonhyeon Station Main Branch in three lines

![Square photo of galbisal grilling on the cauldron lid](https://img.superchart.com/images/nonhyeon-yuksammaeul-galbisal-comparison/nonhyeon-yuksammaeul-galbisal-comparison-03-1q2tb-1200.webp)

- Between the two fresh galbisal cuts, the ojaesaeng galbisal wins — especially the flatter part, my favorite!
- With so many wrap vegetables, there's real fun in mixing and matching, and the free abalone-seafood doenjang stew exceeded expectations.
- Open until 5am Monday through Saturday, so it's a great pick for late dinners or a second-round BBQ spot.

## How many wrap vegetables come with the meat?

![A large plate piled high with wrap vegetables](https://img.superchart.com/images/nonhyeon-yuksammaeul-galbisal-comparison/nonhyeon-yuksammaeul-galbisal-comparison-04-i9mx7-900.webp)

The first thing that caught my eye on the table at Yuksam Maeul Nonhyeon Station Main Branch was the wrap vegetables. It wasn't the usual few leaves of lettuce and perilla — napa cabbage, red leaf lettuce, perilla leaves and various other greens filled an entire large plate. Not a single wilted leaf edge in sight, and everything still had that fresh moisture on it.

![Table set with side dishes like kimchi and scallion kimchi](https://img.superchart.com/images/nonhyeon-yuksammaeul-galbisal-comparison/nonhyeon-yuksammaeul-galbisal-comparison-05-c35j4-900.webp)

![Side plate of shredded scallion, garlic, ssamjang and salt](https://img.superchart.com/images/nonhyeon-yuksammaeul-galbisal-comparison/nonhyeon-yuksammaeul-galbisal-comparison-06-1ubtb-900.webp)

Kimchi, seasoned bean sprouts, scallion kimchi, shredded scallion, pickled onion, garlic, chili, plus ssamjang (wrap dipping sauce) and salt on top of that — there was plenty to add. So I kept changing it up: first just meat dipped in salt, then perilla leaf with ssamjang, then piling on shredded scallion too. If you're the type who keeps wrapping every bite, the sheer variety here would be very satisfying.

When I'm hunting for a good BBQ spot near Nonhyeon Station, the meat itself matters, but since I eat a lot of the side dishes too, a spread like this matters a lot to me. That day, everything was tasty and fresh enough that the vegetables never sat untouched — I kept reaching for more right to the end.

## The cauldron-lid grill and the room at Yuksam Maeul

![A large cauldron-lid grill set into the middle of the table](https://img.superchart.com/images/nonhyeon-yuksammaeul-galbisal-comparison/nonhyeon-yuksammaeul-galbisal-comparison-07-16g3b-900.webp)

Yuksam Maeul uses a large cauldron-lid grill set into the middle of each table.

![Galbisal placed on the cauldron-lid grill](https://img.superchart.com/images/nonhyeon-yuksammaeul-galbisal-comparison/nonhyeon-yuksammaeul-galbisal-comparison-08-kgrv0-900.webp)

![The hood lowered over the table while meat grills on the cauldron lid](https://img.superchart.com/images/nonhyeon-yuksammaeul-galbisal-comparison/nonhyeon-yuksammaeul-galbisal-comparison-09-16u6s-900.webp)

The heat is intense, so there's no long wait after putting the meat on. The parts touching the grill let out a loud sizzle and change color fast, and you can actually see the juices and fat rising to the surface. Each table has a hood right overhead that pulls the smoke away immediately. The restaurant itself is a long, spacious layout with tables running deep into the back, big enough to handle both a dinner for two and a large group gathering.

## Fresh galbisal vs hwangje galbisal: what's the difference?

The meat we ordered that day was cauldron-lid fresh galbisal at ₩19,900 and cauldron-lid ojaesaeng galbisal at ₩22,000.

Both are 150g, and eating them side by side made the difference much clearer.

*Fresh galbisal on the left*

The fresh galbisal has fat woven through the meat, so chewing brought out both the beefy aroma and a nutty richness. The grain of the meat is intact, so there's a real bite to it, and with just a light dip of salt, the flavor of the beef came through cleanest.

![Fresh galbisal cooking on the cauldron lid](https://img.superchart.com/images/nonhyeon-yuksammaeul-galbisal-comparison/nonhyeon-yuksammaeul-galbisal-comparison-12-14t1l-900.webp)

But once we moved on to the ojaesaeng galbisal, we both said at the same time, 'wait, this one's better?' Especially the flat, spread-out piece in the photo.

Grilled on the cauldron, the outside browned and the savory char smell deepened, while the inside chewed far more tender. It broke down in the mouth faster than the fresh galbisal, and when the fat and lean parts hit together, the juiciness was even stronger.

I hate a chewy piece of meat, and this flat cut fell apart tender before I'd even chewed it a few times. In the end I reached for the ojaesaeng galbisal plate far more often than the fresh galbisal.

![A piece of grilled ojaesaeng galbisal](https://img.superchart.com/images/nonhyeon-yuksammaeul-galbisal-comparison/nonhyeon-yuksammaeul-galbisal-comparison-15-1vu8z-900.webp)

First bite: salt.

![Galbisal wrapped in perilla leaf with ssamjang](https://img.superchart.com/images/nonhyeon-yuksammaeul-galbisal-comparison/nonhyeon-yuksammaeul-galbisal-comparison-16-uhbgn-900.webp)

Next: perilla leaf with ssamjang.

Then piled with scallion kimchi and garlic for one big bite.

My boyfriend added shredded scallion, and that worked really well too — the sharp bite of the scallion cut through the fattiness, so even a bigger wrap didn't feel heavy. If I had to reorder just one, no hesitation — it's the ojaesaeng galbisal.

## The free river snail and seafood doenjang stew

![Stone pot of abalone-seafood doenjang stew served with the meat order](https://img.superchart.com/images/nonhyeon-yuksammaeul-galbisal-comparison/nonhyeon-yuksammaeul-galbisal-comparison-17-4f38x-900.webp)

At Yuksam Maeul Nonhyeon Station Main Branch, ordering meat gets you an abalone-seafood doenjang stew on the side. I figured it'd just be a basic stew, but my first spoonful was surprisingly good.

![Seafood doenjang stew with abalone snails and blue crab](https://img.superchart.com/images/nonhyeon-yuksammaeul-galbisal-comparison/nonhyeon-yuksammaeul-galbisal-comparison-18-15yke-900.webp)

Inside the stone pot were tofu, zucchini, scallion, and abalone snails, plus — as you can see in the photo — even blue crab. The doenjang base leans savory, but the salty, clean edge from the seafood keeps the broth from ever tasting flat.

Best of all, after a few bites of meat, a hot spoonful of that broth wiped away the greasiness that comes with grilled meat. Once my mouth got heavy from ssamjang and meat, a spoon of stew, then back to another piece of ojaesaeng galbisal — that stew is partly why our soju disappeared so fast that night.

![An abalone snail lifted out of the broth](https://img.superchart.com/images/nonhyeon-yuksammaeul-galbisal-comparison/nonhyeon-yuksammaeul-galbisal-comparison-19-1q00z-900.webp)

Fishing out the abalone snails was its own kind of fun, and the stew worked well as a drinking snack even without rice.

## Steamed egg, drinks and corkage at Yuksam Maeul

The steamed egg was an extra ₩5,000.

It puffed up above the rim of the stone bowl, and pushing a spoon in revealed soft, cloud-like curds inside. It wasn't too salty, so it worked well as a bite between the meat and the stew.

We also ordered soju and beer that night.

A piece of ojaesaeng galbisal, then a cold beer. A big wrap, then soju. What started as a meat outing naturally turned into a drinking session. They say corkage is free here if you order soju or beer. Wine glasses aren't provided separately though, so keep that in mind if you're planning to bring your own bottle.

## Waiting, parking, group bookings and pets

When we visited on a Thursday at 7:30pm, there was no wait.

![The long dining hall at Yuksam Maeul Nonhyeon Station Main Branch](https://img.superchart.com/images/nonhyeon-yuksammaeul-galbisal-comparison/nonhyeon-yuksammaeul-galbisal-comparison-21-1i70m-900.webp)

![Spacious interior with multiple rows of tables](https://img.superchart.com/images/nonhyeon-yuksammaeul-galbisal-comparison/nonhyeon-yuksammaeul-galbisal-comparison-22-tr3e4-900.webp)

The restaurant has a long layout with a lot of tables, and I was told it can be booked out for up to 70 people. It'd be a good pick for a company dinner or a group gathering too.

If you're driving, free parking is available either beside the restaurant or in the underground lot, according to staff. Small dogs are welcome as long as you bring a carrier or a stroller.

## A Nonhyeon Station BBQ restaurant open until 5am

There's one operating detail here worth pointing out. From Monday to Saturday, they open at 10am and stay open until 5am the next day. Sunday only runs from 10am to 10pm!

There aren't actually that many places around Gangnam where you can grab BBQ meat past midnight after drinks, so staying open this late is a huge advantage!

![Menu board listing pork and beef dishes](https://img.superchart.com/images/nonhyeon-yuksammaeul-galbisal-comparison/nonhyeon-yuksammaeul-galbisal-comparison-24-ktj19-900.webp)
*The menu*

This time we went with two beef cuts, but the menu also has more pork options — thin-sliced pork belly, layered pork belly, thick pork belly, pork skirt, and premium pork neck among others. Given the name Yuksam Maeul (meat-and-wrap village), the wrap-vegetable-and-pork combo might actually be the main event here, so next time I'm planning to try the thin-sliced pork belly or a pork set.

Still, if I had to pick just one thing from this visit to order again, the answer's already settled. The ojaesaeng galbisal — especially that flat piece that spread wide across the grill.

## Who Yuksam Maeul suits, and who it doesn't

- Anyone who loves eating meat wrapped with a wide variety of vegetables.
- Anyone near Nonhyeon Station looking for a late-night BBQ spot or a venue for a group dinner or company gathering.
- Anyone who prefers beef that's soft and nutty over chewy.

- Anyone wanting a quick, bare-bones meal of just meat and out.
- If you don't need late-night hours or barely touch the wrap vegetables and side dishes, you may feel the strengths here less.

### What to order next time

- Ordering the ojaesaeng galbisal again.
- Curious about the pork we didn't get to try this time — planning to order the thin-sliced pork belly or another pork menu item on the next visit.
