Bossam texture can vary a lot depending on when it was boiled, and this place boils it in boiling water every morning and even makes its own kimchi.

## Bossam boiled fresh every morning, kimchi made in-house too

Bossam can turn dry pretty quickly once moisture escapes after boiling, so the fact that it's boiled fresh every morning raised my expectations. On top of that, the kimchi served alongside is house-made too. I tend to think kimchi matters just as much as the meat in bossam, so I was curious how the pairing would work here.

## What comes in the small five-layer bossam set

We ordered the small five-layer bossam set. It arrives on a large plate with bossam, bossam kimchi, cabbage, and ssamjang (dipping sauce). Lettuce and garlic are also provided separately for wrapping to your taste. The meat was arranged neatly and generously on the plate, giving a hearty first impression.

### Moist, tender five-layer bossam

The five-layer bossam had a good mix of lean meat and fat, feeling tender from the first bite. The lean parts were moist rather than dry, and the fatty parts were soft without being overly greasy. The slices weren't cut too thin, either, so you could really feel the meat's characteristic bossam texture.

It's good dipped lightly in salted shrimp, but personally, piling on plenty of bossam kimchi was the combination that worked best for me.

On one side of the plate sits a generous pile of bossam kimchi, deeply coated in red seasoning. It's less like cabbage kimchi and more like a strongly seasoned radish kimchi meant to go with bossam, with a crunchy texture that punctuates the soft meat.

Piling plenty of kimchi onto a piece of meat adds a salty, spicy kick that definitely keeps you reaching for more. I'd also recommend loading lettuce with bossam, garlic, and kimchi for one big bite.

Since bossam itself is a rich, heavily flavored dish, the simple side dishes suited it well. Snacking on pickled vegetables or bean sprouts in between felt like a palate reset, making it easy to keep eating without feeling overwhelmed.

## Choose clam kalguksu or mak guksu with your bossam order

One fun thing about Cheongun Bossam is that ordering bossam lets you choose between clam kalguksu or mak guksu. Adding ₩5,000 lets you switch to maem kalguksu with spicy octopus instead. Wanting something spicier, we went with the maem kalguksu and octopus.

Right when bossam alone might start to feel a bit greasy, having spicy soup and noodles on the side was a combination I personally found quite satisfying. It arrives in a large bowl with red broth, kalguksu noodles, cabbage, seaweed flakes, and a generous sprinkle of sesame seeds on top. The look alone tells you it's going to be spicy.

The broth isn't just aggressively spicy — it's got a savory depth along with the heat. Eating a piece of bossam, then a warm spoonful of broth, worked really well together. There was more octopus in the maem kalguksu than I expected, too.

It's not just noodle-heavy kalguksu — picking out pieces of octopus one by one adds its own fun. The octopus's springy texture, soaked in the spicy broth, offers a completely different flavor from the bossam.

Soft bossam → spicy kalguksu → back to bossam. Eating in this order, there was never a moment it felt too greasy.
