Kimchi is so important at a kalguksu restaurant, right? Choi Jiseong's Seafood Kalguksu makes its kimchi in-house too. Its spicy, clean-tasting kimchi went really well with the mild flavor of the kalguksu. If you run short on sauces or kimchi, use the self-service bar! ### A refreshing broth full of seafood At Choi Jiseong's Seafood Kalguksu, a seafood kalguksu favorite in Daejeon, the generous amount of seafood makes the broth look refreshing from the very start. In particular, it comes with live abalone and assorted seafood, making it feel much more plentiful than a typical bowl of kalguksu where you simply pick up the noodles. The savory flavor drawn from the seafood naturally deepened the broth, which was clean yet rich. It had that refreshing quality that feels like it warms you right through—so delicious. Pick out the seafood one piece at a time, then add the extra kalguksu noodles to the remaining refreshing broth and cook them. Slurp up those bouncy noodles too! The seafood flavor had melted beautifully into the broth, so the more noodles I ate, the richer and more savory the soup became. Especially with those noodles in the hot broth—slurp, yum, slurp, yum. It felt deeply satisfying. I would recommend it to anyone seeking great kalguksu in Daejeon or who likes the clean, refreshing broth of Daejeon mulchong kalguksu-style soup. ### A savory tasting-size seafood pajeon on the side The tasting-size seafood pajeon we ordered with the seafood kalguksu was seriously tasty too. Golden-brown and nicely cooked, it was crisp on the outside and moist inside. The refreshing, hot broth of the seafood kalguksu and the savory pancake made such a good combination. With a refreshing broth generously filled with seafood and bouncy, chewy kalguksu noodles, it was wonderfully filling. On a day when you crave a hot soup dish, try the generous seafood kalguksu at Choi Jiseong's Seafood Kalguksu in Gung-dong if you are looking for a lunch spot in Yuseong-gu, Daejeon or great kalguksu in Daejeon.
