Pairing bites of diced radish kimchi or pickled onions in between bites of yukhoe bibimbap kept the palate clean, and the combination worked really well. It was nice being able to grab as much of the side dishes as I wanted, and I liked that I could refill without feeling awkward about it :) There's also a cute little sign at the self-serve bar that says 'We'll be sad if you leave food,' which I found kind of charming haha. It went really well with a rich, savory dish like the yukhoe bibimbap :) ### Popping the yolk and mixing it in Once you add the seasoning sauce and pop the yolk, mixing everything together evenly makes it much richer and more savory. It wasn't overly spicy — instead you could taste both the savory flavor of the raw beef and the freshness of the vegetables together, so I never got tired of it all the way through. The added sesame seeds rounded out the nutty flavor nicely too. Pop the yolk, then pour in the gochujang (red chili paste).
