## In short

Hana Shabu Shabu Junggye Main Branch is a Japanese-style shabu-shabu restaurant in Junggye-dong, Nowon, Seoul, serving seiro-mushi — beef and vegetables steamed in a cypress steamer. The seiro-mushi lunch special arrived with an hourglass timer to mark the steaming time, and the owner torch-seared beef tadaki right at the table while the writer waited. With bean sprouts and vegetables piled generously under the meat, the spread at Hana Shabu Shabu tasted mild enough to finish down to the last bite.

This time I went to Hana Shabu Shabu Junggye Main Branch to try seiro-mushi, fresh vegetables and tender meat steamed together in a cypress wood steamer. I'd recommend this Junggye-dong shabu-shabu restaurant to anyone looking for a clean, light meal.

## What comes with the seiro-mushi lunch special

What we ordered that day at Hana Shabu Shabu Junggye Main Branch was the seiro-mushi lunch special. Hana Shabu Shabu's menu centers on shabu-shabu and seiro-mushi, and we chose the seiro-mushi lunch special so we could enjoy fresh vegetables and meat in a light, clean way. Each compartment of the cypress steamer came generously packed with meat and vegetables — even the color of the fresh vegetables looked really appetizing.

*A generous portion of meat*

*Packed full of fresh vegetables*

*Time to wait*

Setting up the hourglass and waiting for the food to steam to perfection was a small pleasure in itself.

## Beef tadaki torch-seared in front of you

One of the things I remember most from the meal was the beef tadaki. While the steamer was doing its work, the owner torch-seared it right in front of us with real care, and watching the smoky char take hold was fun to watch.

*Tadaki with a smoky char — a receipt review is basically mandatory!*

The savory flavor with a touch of smokiness had a completely different charm from the light seiro-mushi. It wasn't just about serving good food — he made sure we could enjoy it at its very best, which made the whole meal even more pleasant.

*Putting the vegetable and meat compartments side by side made it look even more delicious.*

## Cypress aroma and a vegetable tray packed with bean sprouts

When we lifted the lid, warm steam rose along with a subtle cypress scent, revealing meat and vegetables cooked just right. The meat was moist and tender, and the vegetables kept their natural sweetness and crunch. Nothing was greasy or heavy — it was clean and light, and felt gentle on the stomach the more we ate.

Healthy food can sometimes feel a bit plain, but with the various sauces on the side, we could enjoy it fully all the way through. What satisfied me most was how generously bean sprouts and vegetables were layered beneath the meat. I'd recommend this dish especially to anyone who usually finds it hard to eat enough vegetables.

*We moved the vegetables into the meat compartment to keep enjoying them warm to the end.*

We kept moving vegetables over to the meat compartment and enjoyed everything warm until the very end. We didn't leave a single bite of the generous meat and vegetables — a beautifully clean finish! I'm giving myself a pat on the back for today's healthy, empty-plate ending. ^^

*We finished off the generous seiro-mushi completely, without leaving a thing.*
