Today's post is about Naengsamok Gangnam Jagok Branch (냉삼옥 강남자곡본점), a new Korean BBQ restaurant in Jagok-dong that I recently visited!

## Retro vibes from the outside

I'd been watching this place since before it opened, passing by often, because even the exterior gave off such a distinct vibe that I was always curious. It's a newly opened restaurant, but it has that retro feel of an old neighborhood BBQ joint reinterpreted in a modern way.

## Interior and atmosphere, plus the self-serve 'Jayul Bar'

Once inside, the retro atmosphere I felt from the outside really comes through — they say the interior reimagines a Gyeongseong-era (colonial-period Seoul) noble house, and honestly, every little detail from the wallpaper to the props was fun to look at. Instead of the usual chaotic, noisy BBQ joint, it felt like stepping into a completely different space, like time travel.

From the chandeliers to the wall lamps, everything seemed carefully decorated 🤭 On one side there's a self-serve bar, fittingly named the 'Jayul Bar' (자율바, meaning 'free-will bar') haha, such a fun name. At this self-serve bar you can refill any of the side dishes from the basic spread yourself, and even make your own bibimbap!

## The menu — frozen, chilled, and marinated

Naengsamok has a truly wide range of grilled meat options, from frozen to chilled to marinated, so it was great to pick according to taste. Beyond the meat menu, there's also a lunch menu, so you can come just for a meal!

## What comes in the basic side dish spread?

I think the most special point about Naengsamok is this massive basic spread — it came out piled high on a giant tray and I was genuinely surprised. Green onion salad, seasoned bean sprouts, green onion kimchi, napa cabbage kimchi, white kimchi, spicy radish salad, lettuce, garlic, chili peppers, sesame oil dip, soy sauce, ssamjang, roasted soybean powder, wasabi, sweet pumpkin salad, old-style sausage, rolled egg, and even raw egg — so many side dishes it's hard to even list them all 👍

They say everything is handmade, and honestly this spread alone could easily finish off a bowl of rice!! All of it is great for wrapping up bites of meat in between or pairing as sides — such a fun mix-and-match experience.

Another fun point about Naengsamok! You can whisk the raw egg from the spread and grill the old-style sausage in it right on the grill 😆 I make old-style pink sausage at home often because I love it so much, but grilling it on a BBQ pan gave it a whole new charm. Straight into a bite with white rice!!

Nicely pan-fried, right? Pink sausage tastes great with rice, but it also went surprisingly well with the pork belly's subtle savory saltiness! One new flavor combo discovered~

Before getting to the main frozen pork belly, I wanted to try the regular pork belly too, so I ordered it. Being able to order in small 100g portions like this is great since there are so many menu items to try a bit of everything.

The biggest appeal of thick pork belly is definitely the juiciness and chew, right? Golden-grilled outside while staying moist and juicy inside, it had a nutty flavor that came through more with each bite. The lean part wasn't too thin either, so you definitely felt like you were eating meat!

The basic pork belly is delicious on its own, but there's real fun in pairing it with the various side dishes — it went especially well with the green onion kimchi! White kimchi, napa cabbage kimchi, napa cabbage kimchi grilled in the pork fat, green onion kimchi — pork belly pairs best with kimchi no matter what, and it was great to have so many kinds to choose from.

### Domestic frozen pork belly

Next, of course, on to the frozen pork belly!! True to the restaurant's name (Naengsamok literally means 'frozen samgyeopsal house'), it's time to taste the essence of frozen pork belly~

If thick pork belly is about juiciness and chew, frozen pork belly is characterized by a more nutty and light, crisp texture — the edges cook quickly while the center stays tender and jiggly. Sprinkle on the pepper and salt sitting on the table for the full frozen pork belly experience!

And once you come to Naengsamok, just put everything on the grill!! The fun is in grilling both the meat and side dishes together on the pan. They even coat leftover egg wash from the sausage onto green onion strips and grill those too — anything cooked in that savory pork fat tastes amazing 😋

Then just wrap this tender frozen pork belly with various ingredients — done!! This is honestly why I love frozen pork belly so much. With soft, springy, nutty meat, plus crunchy veggies and spicy sauces going back and forth, both mouth and hands stay busy enjoying all the different flavors 😆

### Unpan japchaguetti (grill-pan jjapaghetti)

I ordered the unpan japchaguetti almost hypnotized after seeing the menu photo... and honestly, isn't this basically a jjapaghetti (black bean instant noodle) art piece? The sauce consistency was perfect 👍 I've had bibim noodles and naengmyeon with frozen pork belly before, but this was my first time pairing it with jjapaghetti — and yep, frozen pork belly really is a broken OP character that goes with everything 👍 Top the jjapaghetti with a piece of frozen pork belly and some nicely grilled kimchi — game over.

### Daepae samgyeopsal (paper-thin pork belly)

It felt too early to stop there, so one more plate of daepae samgyeopsal! Going from the thick cut all the way to this ultra-thin style made for a great course. Daepae samgyeopsal's biggest charm is how paper-thin and tender it is — quickly seared on the grill and wrapped up with the side dishes, it perfectly finished off the meal with its silky texture 👍

## Overall thoughts

Naengsamok really feels like a place where you can experience every way of enjoying pork belly. Frozen, chilled, and daepae — every thickness of meat, tasted almost like a course in one place. The meat itself is great, but the wide variety of side dishes to pair with it makes it even more fun to pick and choose. A great spot to visit in Jagok-dong when you're craving frozen pork belly, or want a relaxed meal with friends and family.
