There are days when you crave authentic North Korean-style mandu (dumplings) and buckwheat makguksu (cold buckwheat noodles) — mild, unfussy, but deeply flavorful. I stopped by Bubyeokjeong Pyeongyang Mandu, a well-known Paju restaurant near Paju Book City that's built a strong word-of-mouth reputation among food lovers!

## What's the atmosphere like inside?

Stepping inside, I was struck by the bright, tidy wood-toned interior, café-like in feel. The tables were spaced generously and the restaurant was spotless, so it seemed like a great spot for a family meal or bringing your parents along.

After a friendly staff member showed us to our table, we ordered a bit of everything to try the range of the menu: Pyeongyang water makguksu, Pyeongyang bibim makguksu, arongsatae suyuk (half plate), and a Pyeongyang mandu platter.

## Pyeongyang mandu platter

First to arrive, piping hot, was the generously sized Pyeongyang mandu platter, freshly steamed. The thin, chewy dumpling skins were packed tight with clean-tasting tofu, crunchy mung bean sprouts and pork — I gasped with the first bite.

Thanks to the mild, non-greasy umami typical of North Korean-style handmade mandu, I could keep eating without ever getting tired of it.

## Arongsatae suyuk (half plate)

Next up was the arongsatae suyuk (half plate) — thinly sliced beef shank, boiled — and the balance of its signature chewy texture with moist, tender meat was superb. Paired with the accompanying spicy scallion strips and special sauce, it left a clean but luxurious beefy aroma lingering in the mouth.

## Pyeongyang water makguksu and bibim makguksu

The Pyeongyang water makguksu came next, and the clear, refreshing broth — a harmony of nutty buckwheat noodles, meat stock and dongchimi (radish water kimchi) — was outstanding. No artificial seasoning taste, just a clean finish that had me drinking the broth down to the last drop.

The Pyeongyang bibim makguksu, with its mouthwatering red sauce, had a gentle fruity sweetness and a spicy kick that clung perfectly to the buckwheat noodles, waking up the appetite. It wasn't harshly spicy at all — more of a refined heat that anyone could enjoy comfortably.

### Eating order and the best combo

Chewy arongsatae suyuk ➔ spicy Pyeongyang bibim makguksu ➔ clean Pyeongyang mandu platter ➔ refreshing Pyeongyang water makguksu

The best combination I discovered here was wrapping a slice of arongsatae suyuk in the sweet-spicy bibim makguksu! The clean juices of the meat mingled with the bright sauce for a perfect harmony.
