When the weather turns chilly, or when you just want to slurp down noodles in a piping hot broth, Nahonsha near Hapjeong Station is the move! This is a solo shabu-shabu specialist, so it's a precious little spot where you can pick your own broth and noodle sari (add-on noodles) to taste. We each ordered to our own preference — clear broth and spicy broth — and finished off the whole spread with kalguksu, sujebi, and self-made porridge. Here's the honest review.

My friend went with Nahonsha's clear broth shabu. Clear broth is mild and deep without any sharp punch, so it lets the natural, savory flavor of the vegetables and meat come through!

The beef in the basic set had zero off smell and a bright red color, so it was perfect for a quick shabu-shabu just until the pink disappears!

The vegetable assortment, filling the bowl to the brim with bean sprouts, bok choy, napa cabbage, enoki mushrooms, and oyster mushrooms, was completely crisp and fresh without a single wilted piece.

Piling plenty of vegetables into the hot broth, letting them wilt slightly, then wrapping tender cooked meat around bok choy and bean sprouts and dipping it in chili sauce or ponzu — the meat and vegetable juices practically explode in your mouth ;;

The meat had such a vivid, bright red color that it paired incredibly well with the spicy broth.

After steadily fishing out meat and vegetables, the meat fat and vegetable stock melt deeply into the clear broth, creating a rich, savory base!

That's exactly when I dropped in the sujebi (hand-torn dough) I'd added — the thin, chewy dough pieces get completely coated in the sweet, savory shabu broth.

There was no floury raw taste at all, just that signature chewy, springy sujebi texture — a totally satisfying special side after finishing off the vegetables and meat!

Cooking the kalguksu noodles included in Nahonsha's basic set until fully done and slurping them up, the noodles come out perfectly seasoned by the now-rich broth with no extra sauce needed!

## How does the self-serve porridge finish work?

My friend wanted porridge, so we did Nahonsha's self-made porridge — the diced vegetables for it were frozen!

For my friend's pot, the leftover broth was reduced down, then rice, diced vegetables, and egg were all stir-fried together into a self-made porridge.
