I went with my kid for a family meal to Jangwongap Kalguksu Yongin Giheung Branch, a kalguksu (knife-cut noodle soup) spot in Giheung-gu, Yongin. They make their own noodles using a 60-year-old kneading method — kneaded a thousand times — and pair it with chadol-mi ssam (premium wagyu beef brisket and fresh minari wraps). Chadol-mi ssam, kalguksu, fried rice, dessert — it really had everything!! Here's my visit review!

## A kalguksu spot near Giheung IKEA and Giheung Lotte Outlet

The sign at the entrance — 'The Power of a Thousand Kneads, Handmade Noodles' — really grabs your attention. You can tell right away how proud they are of their noodles! There's a large parking lot in front of the building, so parking was easy.

### Jangwongap Sanghoe: for waiting time and after your meal

At the entrance there's a dessert zone with various old-fashioned snacks and a refreshing misugaru (roasted grain powder) slushie. You can't eat these at your table — they're for enjoying while you wait or on your way out after your meal.

The interior is very clean and spacious. With a mix of 4-seat tables and larger group tables, it's great for family meals and easily handles group gatherings too. Baby chairs are plentiful, so dining with young kids is no problem.

Broth, minced chili, and the salad made with plenty of Uiseong garlic are all available for self-serve refill. The whole shrimp seafood pancake is packed full and quite generous in portion, so there are takeout containers set aside for leftovers.

You choose your broth from White / Red / Mala, with mala broth costing an extra ₩1,000 per person. There's also Jochiwon Peach Bibim Mandu ₩9,900 (limited to 20 a day) and the fully-packed Whole Shrimp Seafood Pancake ₩13,500. You pick your main and broth, then add sides or extras as you like.

Ordering is done conveniently via the tablet on the table~~ Ice-cold water, bonito soy sauce, and a soy sauce dish are all neatly arranged on the side. A very thoughtful kalguksu spot in Giheung-gu, Yongin!

The table was set with fresh minari, sesame oil sauce pressed at their own mill, premium wagyu, salted hairtail viscera sauce, and a spicy broth full of oyster mushrooms.

Jangwongap's own kalguksu noodles — which offer a kind of noodle omakase, changing texture over time — came out along with Uiseong garlic kimchi and wasabi. Once the broth boils, you're supposed to enjoy the brisket and minari first, then cook the noodles to your liking, and finish with a request for kkakdugi (radish kimchi) fried rice.

## Limited to 20 a day: Jochiwon peach bibim mandu

The Jochiwon peach bibim mandu (mixed dumplings) came out on a charming peach-shaped tray~ Perfect as an appetizer while the broth comes to a boil!

This side dish is made with peach vinegar from peaches grown in Jochiwon, mixed with a natural-fruit bibim sauce and fresh vegetables, served alongside freshly fried dumplings.

Nutty brisket and fresh minari dipped simply in sesame oil is already a treat, but be sure to add the salted hairtail viscera sauce too. The umami just explodes! Dipping it in sesame oil pressed at their own mill doubles the nuttiness and makes your whole mouth happy~

## Noodle omakase: texture by the minute

- 5 minutes: chewy
- 6 minutes: springy
- 7 minutes: tender-chewy
- 8 minutes: fluffy
- 10 minutes: soft

Doesn't the noodle look really moist and fluffy? If you grab a single strand and stretch it, it stretches out like cheese~ Amazing elasticity!!!! Unfortunately my hands were tied up with other stuff so I couldn't capture it on camera haha.

Once the broth boils, you flip the hourglass to count the time. Just stir the noodles well while they cook! We turned the heat down to medium after 5 minutes and let it simmer gently, and got to experience all the textures — chewy, springy, tender-chewy, fluffy, soft~

The broth, simmered down with pollack, kelp, anchovy, shrimp, radish, scallion, and garlic, was seriously refreshing! I chose the spicy broth, but it wasn't harshly spicy at all, so even our kids ate it happily.

The salad made in-house with Uiseong garlic and sun-dried salt is a real treat~ Make sure to pair it with your meal!

### The chunchu oyster mushrooms are a highlight too

At Jangwongap Kalguksu Yongin Giheung Branch, they source chunchu oyster mushrooms — apparently not grown by a single farm in the Chungcheong region — through contract farming with growers in Gyeonggi-do~ The chewy texture of these oyster mushrooms was really appealing. A satisfying highlight for a mushroom lover like me!

## Free perilla oil kkakdugi fried rice

Made with 100% perilla oil, well-fermented kkakdugi (radish kimchi), domestic seaweed flakes, and top-grade domestic rice — this fried rice is irresistible~~

They brought out a heaping pile of kkakdugi fried rice and drizzled perilla oil over it right there~ That nutty aroma brought my appetite right back~

Top the well-fried rice with kimchi and you'll be scraping the bowl clean even if you're already full!

## Finishing with icy misugaru and old-fashioned snacks

I was already so full from the meal, but you can't skip the dessert zone~ Even after the fried rice, I was truly at capacity, but somehow there was still room for this!! The nutty misugaru and crunchy old-fashioned snacks made for a perfect finish!!!

The nutty sesame oil, pressed fresh at their own mill, is also available for purchase! It would make a great holiday gift, or a nice present for Teacher's Day or Family Month.
