But wow... it really grabs your attention, doesn't it?

This is a dish you eat with your eyes before your mouth. The plating with melon and prosciutto was so beautiful that I couldn't pick up my fork for a while — I just kept taking photos.

When they serve it, they mix the uni in with impressive skill, keeping it perfectly even. But the moment I tasted it — wow, I immediately understood why everyone orders this. If the uni is too strong, it overwhelms the whole pasta, but if it's too weak, there's no point ordering uni pasta in the first place.

It's a dry style that doesn't lead with sweetness, so it carried through naturally from the melon prosciutto salad all the way to the uni pasta.
