With Chuseok coming up, I suddenly found myself thinking so much about the savory mung bean pancakes my mom would lovingly make every holiday, grinding mung beans on a millstone and frying them crisp! After furiously searching for a great mung bean pancake spot near Paju to find that nostalgic homemade taste, I visited Bubyeokjeong Pyeongyang Mandu.

## A spacious, tidy Pyeongyang mandu restaurant in Paju

The neat exterior of this single-story building feels both modern and wonderfully old-school, like a serious restaurant should. The softly glowing Bubyeokjeong sign and the pleasant interior visible through the front windows immediately caught my eye. I was honestly amazed by just how big the building was!

Once inside, the restaurant was enormous! Warm beige and wood tones gave it such a clean, orderly feel. The tables were generously spaced, so it would be great for a family meal, a gathering, or even a date after outlet shopping. Our table was beside a wall of windows, which made it especially nice to eat while looking outside.

There are tables in various sizes, starting with four-person seating, and each table has an induction burner, a menu, and instructions explaining how to enjoy the dishes!

There was chili powder, vinegar, and hyangsinjang, the house dipping sauce, on the table.

## Choosing mandu hot pot after the mung bean pancakes sold out

You order through the table kiosk, and there were plenty of choices, from individual meals to hot pots. But oh no! I arrived full of anticipation, only to find that the popular mung bean pancakes I had wanted so badly were completely sold out. With disappointment, I put the pancakes aside and chose other dishes instead.

- Meal menu: Pyeongyang mandu hot pot ₩14,000 per person; Pyeongyang mandu soup ₩11,000; mandu jjabagi and Korean beef jjabagi ₩12,000 and ₩14,000; children's mandu soup ₩6,000.
- Seasonal menu: Pyeongyang mul makguksu (cold buckwheat noodles in broth) ₩12,000; Pyeongyang bibim makguksu (spicy mixed buckwheat noodles) ₩12,000.
- Sides: mung bean pancake ₩10,000 (sold out on my visit), boiled arong-satae beef shank, seasonal dressed vegetables with tofu, Pyeongyang plate mandu, and more.

I wanted this and that... If the mung bean pancake had been available, I would have had it with Pyeongyang makguksu. In the end, though, we ordered ✔️ two servings of Pyeongyang mandu hot pot.

You can choose either clear or spicy broth. I wanted to properly taste the mild, clean flavor of the Pyeongyang mandu, so I ordered the clear broth.

## How to enjoy Pyeongyang mandu hot pot

Every table has a card titled “How to Enjoy Mandu Hot Pot,” so you can simply follow along.

The set includes all kinds of mushrooms—shiitake, oyster, enoki, wood ear, and sanghwang—plus bean sprouts, napa cabbage, bok choy, mandu, and kalguksu noodles.

Once the clear broth comes to a rolling boil, add the fresh, plentiful vegetables first—enoki mushrooms, shiitake mushrooms, napa cabbage, mung bean sprouts, and wood ear mushrooms—to draw out a vegetable broth.

The mandu arrive already properly steamed, so the wrappers can turn mushy if you boil them too long! The key is to blanch them in the broth for only one to two minutes, then take them out before they fall apart. I loved that there was barely any waiting before we could eat them.

The Pyeongyang mandu, generously filled with tofu, pork, and mung bean sprouts, are wonderfully mild. Dip one into the restaurant’s special hyangsinjang and a deep savory flavor fills your mouth.

It was also fun picking out bites of arong-satae beef shank, wood ear mushrooms, shiitake mushrooms, and sanghwang mushrooms.

I had a feeling the mandu soup broth was something special, and apparently Bubyeokjeong's Pyeongyang mandu soup is slowly simmered clear and clean with 1++ Korean beef rich in oleic acid, ginseng, and jujubes, then finished with Joseon soy sauce in the beef broth!

After enjoying the mandu and vegetables, add the remaining rich broth and kalguksu noodles. Cook them according to the five-minute hourglass timer, then boil for about one minute more for the ideal texture.

We prefer noodles well cooked rather than chewy, so I think we cooked ours for about seven minutes! Please cook them to your own taste.

## A self bar, plus children's tableware

If you run short on side dishes during your meal, you can conveniently use the self bar.

I was impressed by the thoughtful setup: refills of the basic side dishes, children's tableware, extra broth, and even self-service takeout containers so you can neatly pack up leftovers yourself. High chairs for little ones are available too.

Sadly, I could not try the sold-out mung bean pancake, but there was a Naver review event for it. The first 10 teams receive a mung bean pancake. They say the pancakes take five hours to make every morning, and because they soak and grind 100% fresh mung beans themselves without adding mung bean flour, the daily quantity is limited!! I will have to try again next time!

I also really want to try the boiled arong-satae, known as the best cut of shank, and the seasonal vegetables and tofu made with Gangneung Chudang tofu!

Bubyeokjeong was also running a one-minute customer survey. Take part and you receive one canned drink right away, so do give it a try. The survey takes about one minute and is available once per table.

## The dessert bar waiting after the meal

What surprised me as we were leaving after the meal was the dessert bar!

There were misutgaru (roasted grain powder drink), Bubyeokjeong coffee, and nostalgic snacks. When I opened the misutgaru lid, I was so surprised. I thought it would be a simple container of powder, but it was continuously stirred automatically to prevent sediment from forming when the misutgaru sits still—is that how I should describe it? It was so fascinating. It was wonderfully nutty and sweet, too. I was already incredibly full, but I poured about two-thirds of a cup and drank every last drop!

There was such a wide assortment of warm, nostalgic snack foods. It was a shame that I could only sample the sweet, nutty treats!

## Takeout that made me think of my parents

A large freezer display case is set up on one side of the restaurant, so if you place a takeout order, it is prepared promptly for you when you finish eating and head out.

I naturally thought of my parents and added a takeout order, and it turns out this place is also well known for takeout! You can enjoy the same flavor you had at the restaurant at home, so I highly recommend it as a gift, too.

As befits a restaurant that specializes in takeout, when I got home and opened the Pyeongyang mandu hot pot package from Bubyeokjeong Pyeongyang Mandu, everything was packed so neatly! They even included a note explaining how to enjoy it, so we ate deliciously at home as well.

## The origin of the name Bubyeokjeong

A quick aside! I was curious about the origin of the name “Bubyeokjeong (浮碧亭),” and apparently it comes from Bubyeongnu, a beautiful pavilion on the banks of the Daedong River in Pyeongyang. They wanted to create a warm pavilion-like place where anyone could stay comfortably, so instead of the loftier “nu” (樓), they chose the lower, more relaxed “jeong” (亭).

I came because of the mung bean pancakes that I sadly did not get to eat, but I was completely satisfied with the clean clear-broth Pyeongyang mandu hot pot, thoughtful self bar, and impressive dessert bar service. With neat food, a pleasant space, and convenient parking, this is a Paju Lotte Outlet restaurant well worth visiting after a Paju outing or shopping trip. Next time, I am definitely coming earlier to try the mung bean pancakes and arong-satae!
