## Madam Hao, a Northern Vietnamese restaurant near Ajou University in Suwon

I went to Madam Hao, a place worth remembering when you want something a bit different to eat near Ajou University. Unlike the pho-centric Vietnamese restaurants most people know, this place serves Northern Vietnamese food, so it'll be especially welcome for anyone who loves bun cha (grilled pork with rice noodles) or banh mi (Vietnamese baguette sandwich).

The exterior already has that relaxed, nature-friendly Vietnamese vibe. Even though I went for the opening-time open-run, Vietnamese customers were already waiting for food, and I was the second customer — but more Vietnamese guests kept coming in after me, and I thought, wow, this place must be the real deal.

## Inside Madam Hao: interior and group seating

Stepping inside Madam Hao, bamboo blinds, rattan lighting, and wood tables combined to create a warm, exotic atmosphere. Tables line both sides of the long, narrow space, and it looked comfortable whether you're dining solo or with friends and family.

Right as I was leaving, a large group (about 20 people) came pouring in, but the inside was spacious enough that there seemed to be plenty of seats.

## What comes with Madam Hao's bun cha, served in a bamboo basket

I ate bun cha at the restaurant and took the banh mi I was curious about home to try separately. After ordering at the table, crispy shrimp chips came out first, which was a nice surprise.

The bun cha came out first, with noodles, vegetables, meat, and sauce each served separately in a bamboo basket — it was a treat just to look at.

The pure white rice noodles were light and soft — a little different from the bun cha noodles I remember from Hanoi — and they were warm as if just boiled, springy rather than mushy or clumped together.

### Flame-grilled pork and vinegar-pickled garlic: the kick in the bun cha

The meat, the heart of bun cha, had a subtle smoky char, and dipping it into the sweet-salty sauce along with the noodles and vegetables made for great harmony. Eating good bun cha after a long time made me so happy ♡

I could add fresh vegetables and fragrant Southeast Asian basil leaves to taste. In particular, there was a generous amount of fragrant, distinctly flavored leafy greens like basil, and each bite refreshed the taste of the meat and noodles. The sauce had chili in it, which was a nice touch — more about adding savory depth than heat.

Dipping the noodles in the sauce and topping them with meat and vegetables all at once was great, but especially — there's a tiny jar on the table, and opening it reveals vinegar-pickled garlic, and this, this is a serious kick!!! Definitely try it alongside everything else.

It wasn't heavy, but with such a variety of ingredients it was plenty satisfying as a full meal. Cleared the plate, no leftovers~~

## Madam Hao banh mi, taken home as takeout

Even after taking the banh mi home, the bread's crispy texture held up quite well. Between the crispy outside and fluffy inside were generous amounts of Vietnamese fish cake, meat, vegetables, and herbs, and the cross-section showed the filling packed in without a single gap. The crunch of the vegetables paired with the salty, tender fish cake and meat made it filling enough as a meal on its own.
