The chicken breast namul was tangy — at first I thought it was baek-kimchi (white kimchi), but it turned out completely different, which surprised me.

The grilled flounder was crispy with a sweet glaze that paired really well with the seaweed soup, and the cabbage salad was so crisp and fresh that my chopsticks kept going back for more.

The rice comes as tot (seaweed) rice, and eating it with the seaweed soup made the whole meal feel wholesomely balanced.

As the sign on the wall says, the seaweed soup isn't pre-made and ladled out — each bowl is simmered to order, like brewing a tonic. Seeing it arrive bubbling in its own stone pot raised my expectations right away.

### Is the boneless flounder seaweed soup fishy?

I was a little worried the fish seaweed soup might taste fishy, but not at all — there was a subtle, nutty perilla aroma, and the flounder flesh had broken down soft and flaky, so my spoon kept going in on its own.

The broth had just the right balance of clean and salty, and the seaweed still had a crisp, firm texture.

The broth had been simmered rich and long, with plenty of beef in it, so one spoonful filled my mouth with a deep, rich flavor.

Comparing the two, the flounder soup had a nutty, clean charm, while the beef soup had a heavy, deep character — each with its own distinct personality. The portions were huge, so even after eating heartily we had leftovers. Banchan can't be packed to go, but the soup can.
