Hi, this is Yul! I really love kalguksu (knife-cut noodle soup), but my fiancé prefers other dishes. Shabu kalguksu is one menu we both love though, so we end up going often.

When I'm craving hot broth and want to enjoy shabu-shabu, kalguksu, and finishing porridge all in one meal, I'll introduce a Byeollae favorite: Onjeongban Shabu Kalguksu Namyangju Byeollae Main Branch. It's located in the area near Bulamsan where restaurants and cafés cluster, and apparently it's also a great stop after hiking.

Head toward Bulamsan in Byeollae and you'll find a cluster of restaurants and cafés. Onjeongban Shabu Kalguksu sits further inside that area.

The exterior was so clean I would have believed it was newly opened.

I felt good just walking up before I even went inside.

### Parking and the atmosphere inside

Parking is available in front and on the side of the store, plus there's a dedicated lot. Anyone driving can visit without worry.

The moment you step in, the bright lighting and overall cleanliness catch your eye. Even with lots of tables, the spacing felt generous, not cramped.

Table spacing matters a lot with shabu-shabu since you're handling hot pots, and this place clearly had that covered. Each table has a built-in induction stove, which felt both hygienic and safe.

Restrooms are separated by gender, and there's a group seating area too, so it seems well suited for family gatherings or work dinners. Among Byeollae kalguksu spots, this one seemed easy to visit with a baby too — I saw a lot of families.

You order through the T-order tablet at each table. Small plates, sauce dishes, and wet wipes were all neatly arranged, so everything was handled right at the seat. The owner kept circling the hall checking if anyone needed anything. True to the name, it really felt warm and caring.

On one side there's a self-serve bar, which might be one of the biggest reasons people come to Onjeongban.

The menu lineup is really solid: the 7-course Onjeongban Shabu Kalguksu set is ₩11,000, Onjeongban self-serve shabu sujebi is ₩11,000, handmade guril mandu hot pot is ₩13,000, and the Onjeongban Shabu + Eomnamu Herbal Pork Set is ₩14,000. Gondeure rice and geotjeori kimchi are free! Given how expensive eating out has gotten, this lineup at these prices is genuinely kind.

## Unlimited gondeure rice — we had it three times

The self-serve gondeure rice is really the heart of this place. It's available for unlimited refills at the self-serve bar.

You scoop out as much as you want from the rice cooker, drizzle on sesame or perilla oil, add the special sauce, and mix it all together — it was so good that my fiancé ended up refilling it three times that day haha.

Nutty and slightly salty, it already filled us up before the shabu-shabu even arrived. The gondeure rice alone is reason enough to call this a great-value Byeollae restaurant and worth the trip.

Apparently they toss the geotjeori (fresh kimchi) fresh twice a day. Maybe that's why it had such a crisp texture and perfectly balanced seasoning — it was really delicious. The salad was tangy too, nice to pair between the warm dishes.

## Handmade guril mandu hot pot for two

The handmade guril mandu hot pot comes with a pot beautifully filled with vegetables and mushrooms — napa cabbage, bok choy, minari (water dropwort), bean sprouts, enoki mushrooms, oyster mushrooms, and even sweet pumpkin, all generously loaded.

None of the vegetables looked wilted or dried out; they were so fresh that I was already excited before the broth even started boiling. Once it boils, you add the guril mandu (rolled dumplings) and cook them through.

The guril mandu are packed so full you barely notice any dumpling wrapper. I also liked that they held their shape well even after long boiling.

Without a thick wrapper getting in the way, you get to enjoy purely the filling, which made it taste even better. The filling was packed with meat so the juices burst out, and the chives inside stayed crunchy and delicious.

Next, you add the shabu-shabu meat little by little and eat it together with the vegetables — since the vegetables were so fresh, that crisp texture really came through. The meat was tender too, with no gamey smell.

### Kalguksu noodles and finishing porridge

Once you've eaten your fill of the hot pot, you add the kalguksu noodles and cook them in. The broth, having absorbed the meat and vegetable flavors, gets much richer than at the start.

The noodles had a nice chewy texture too. If the broth runs low, both clear and spicy broth are ready at the self-serve bar, so you can add as much as you need.

Because the kalguksu was cooked in that deeply infused broth, the rich broth flavor really came through.

After finishing the kalguksu, the finishing touch for shabu-shabu has to be the porridge. Add minced vegetables, rice, seaweed flakes, and a raw egg, then simmer slowly to make a soft, savory porridge.

Even full, I kept reaching for more. It was satisfying right to the very end, so from now on, whenever I think of shabu kalguksu, Onjeongban will probably come to mind first.

## Dessert: slushies, coffee, and rice crackers

On the way out after finishing the meal, there are snacks, slushies, and coffee ready for you. You can take the slushie to go, and there were also ppeongtwigi (puffed rice snack) and rice crackers, perfect for cleansing your palate.

I've seen places offer coffee or ice cream as dessert, but this was the first time I've seen three kinds of rice crackers, and they tasted great too. That's about as complete as dessert gets.

## To sum up

With so many fresh vegetables packed in, it really felt like a healthy meal. I already found myself thinking I should bring my parents next time I visit.

I also liked how the owner kept checking in on guests and being so kind throughout. As a great-value Byeollae restaurant, being this full for this price gives you no reason not to come. Next time, I definitely want to try the Eomnamu Herbal Pork Set too.

It's a great stop after hiking Bulamsan and also perfect for a family meal out, so if you're in Byeollae, give it a try! Make sure you try the gondeure rice!!!
