I'm a fan of nurungji (scorched rice) itself and sometimes boil it at home, but nurungjitang with seafood at a Chinese restaurant has its own appeal. Especially with hot soup where seafood and nurungji come together, it felt like a dish I'd crave more as the weather gets cooler.

## How does the seafood nurungjitang taste?

The seafood nurungjitang finally arrived! Since it's a dish meant to be eaten piping hot, it looked appetizing the moment it came out. Nurungjitang really is best eaten warm, so I ladled some into my small plate right away. The broth had a savory depth from the seafood, going down warm and smooth.

What was most fun was how the nurungji got softer and softer as it soaked in the broth. At first the nutty, toasty flavor of the nurungji itself came through, and as it soaked up more broth it turned moist and soft. ### Why the warm, nutty scorched rice works so well

What I liked most about the nurungjitang was the nurungji itself. It was fun watching the crispy-roasted rice turn soft as it met the hot broth. It wasn't overly mushy from the start — you could still catch the toasty flavor and texture of nurungji here and there, making it nice to eat slowly.

And I can't leave out the fresh tenderloin sweet rice tangsuyuk we ordered alongside. Tangsuyuk lives and dies by its crispy coating and meat texture, and this place's version, using fresh pork tenderloin, felt notably soft. Sometimes with tangsuyuk the coating is great but the meat ends up a bit tough.
