Here, meat is trimmed in-house after going through two aging processes over 144 hours at a low temperature of 2°C. They say the restaurant varies the depth of aging by cut—including pork belly, five-layer pork belly, pork neck, and pork jowl—to bring out each one's texture and flavor.
