This isn't just a quick one-bowl meal spot — it's designed to be enjoyed like a course meal, dubbed the "omakase of kalguksu," so I was already hyped before even arriving. Went straight there for weekend lunch full of anticipation 💕

## How long is the weekend wait? Inside the Jangwongap Sanghoe waiting lounge

We arrived around 1pm on a weekend and there was about a 30-minute wait. Being such a famous kalguksu spot in Giheung-gu, Yongin, the line kept steady.

You register your wait on-site via CatchTable. Right after registering, they guide you to fill out the order form on the spot! Once you submit the completed form at the counter, your order goes in right away — so once you're seated, the food comes out super fast 👏 I was genuinely touched by how thoughtful the owner was during the wait 🥹

There's a waiting lounge inside called 'Jangwongap Sanghoe,' stocked with all kinds of crispy ppeong튀gi (puffed rice crackers) you can freely help yourself to!

On top of that, there's a cool, nutty misugaru (grain powder) slush available too! This slush was seriously my exact taste 🤤 The 30-minute wait didn't feel boring at all!

## Jangwongap Kalguksu interior and the self-service corner

After a happy 30-minute wait, we were finally seated inside! 🎈 The interior was really spacious and comfortable. Baby chairs and even kids' tableware were fully prepared, so it looked great for visiting with a baby. In fact, since the space is wide and roomy, people with strollers were dining comfortably too 👶👍

The self-service corner on one side of the restaurant was impressive too! Soy sauce for the pancake, spicy pepper paste for extra heat, refill broth, kids' tableware, and even takeout containers for leftover pancake — all set up. It felt like they'd carefully anticipated exactly what customers would need! 💯 (Though we finished the pancake completely, so no need for that takeout container — it disappears that fast.)

At Jangwongap Kalguksu, you can choose your broth type based on preference! Broth options are red broth / white broth / mala broth.

- Chadol minari-ssam shabu kalguksu
- Live abalone chadol shabu kalguksu
- Shabu kalguksu
- Plain kalguksu (no meat)

We ordered the red broth chadol minari-ssam shabu kalguksu, and added the whole shrimp wonton/dumpling add-ins and whole shrimp seafood pancake as sides that we were curious about 🍤🥟

Right at the entrance, both 'whole shrimp seafood pancake' and 'Jochiwon peach bibim mandu' are recommended as the best sellers, so I wanted to try both! Unfortunately, the 'peach bibim mandu' has a daily limited quantity and reportedly sells out by around 11:30am 😭 If you want to try the peach bibim mandu, I strongly recommend an early morning opening run! (Next time I'll definitely come early on a weekday and succeed with the mandu 🔥)

## What does the whole-shrimp seafood pancake taste like?

Check out the insane visual of the whole shrimp seafood pancake that came out first!! It's fried golden and crispy, and when I cut a piece to check the cross-section, it was truly amazing 💥

Every bite of the pancake was packed edge to edge with whole shrimp, chewy squid, and octopus — a full-on texture party! The outside was crispy like a cracker and the inside moist, perfect for waking up the appetite before the kalguksu 🍤🦑

Next, the main shabu kalguksu setup was complete! Staff kindly asked if it was our first visit, and walked us step by step through how to enjoy Jangwongap Kalguksu 200% like an omakase — you could feel the pride in every word!

Before the noodles come in properly, course 1 fills you up with rich meaty aroma! As the spicy, refreshing red broth boils away, they lightly blanch premium wagyu chadol brisket and pile it into a big wrap with fragrant minari (water dropwort) and mushrooms 🌿

Dip it into the nutty sesame oil sauce pressed fresh at the local oil mill and take a bite... wow, the fragrance of the minari and the savory juiciness of the brisket explode in your mouth!

That familiar umami we all know, boosted by sesame oil aroma — a taste that truly kicks off the meal 😋

## House-made noodles that stretch like cheese, in five stages of texture

Now it's finally time to meet the real star of Jangwongap Kalguksu — the noodles! 🍜

Unlike typical kalguksu where the broth is the focus, at Jangwongap all the technique is concentrated in the noodle itself. It's house-made using a 60-year traditional noodle-making method, kneaded a thousand times. Before dropping the raw noodle into the boiling broth, we stretched it out ourselves.

And it truly, insanely stretched without breaking, like mozzarella cheese! 🤩 No wonder it earned the nickname 'cheese noodle.'

Now you drop the noodle into the broth as-is, flip the hourglass timer, and enjoy the dramatic texture changes across five stages of boiling time!

- 6 minutes: a chewiness that hits as soon as it touches your mouth
- 7 minutes: a stickier chew that builds as you bite
- 8 minutes: a pleasantly bouncy texture
- 9 minutes: a fluffiness soaked in broth
- 10 minutes: a softness that glides down your throat

We pulled a little noodle out at each timer mark, and you could genuinely feel the texture changing as time passed — really fresh and fun! The chewiness was incredible and the noodle itself was seriously delicious 💯

## Dipping in sesame oil with Uiseong garlic kimchi

You absolutely must try 'sesame oil dipping' — dipping the noodle, at its bounciest and chewiest around the 8-minute mark, into fresh-pressed sesame oil from the mill!! Dipping kalguksu in sesame oil sounded unfamiliar at first, but since it's freshly pressed, one bite bursts with nutty aroma that completely shatters everything you thought you knew about kalguksu 🤤 This sesame oil is truly an insane kick! If you come to Jangwongap, the top kalguksu spot in Giheung-gu, Yongin, sesame oil dipping isn't optional — it's a must!!

And the kimchi — made fresh three times a day, labeled 'Uiseong garlic kimchi' on the wall haha, heavily emphasized!!! Piled onto the noodles and wrapped together, the spicy-pungent kick and umami balance out perfectly. The kimchi itself is spicy and clean, and it's a genuinely amazing pairing with the kalguksu! 🔥

## Shabu add-ins: whole-shrimp wonton and meat dumplings

We also boiled the whole shrimp wonton and dumplings we'd added as extra sarī (noodle-soup add-ins) right in the broth!

The wonton had a delicately thin wrapper and the shrimp inside popped with texture — amazing. The meat dumplings were also generously filled and full of flavor. The completeness of even the smallest sides was impressive 👏

## Finishing with perilla oil kkakdugi fried rice

No matter how full you are, you can't skip the Korean essential dessert — fried rice! We ordered the 100% perilla oil kkakdugi (radish kimchi) fried rice to finish 🥘

Top-grade rice, 100% real perilla oil, perfectly aged crunchy kkakdugi, and domestic seaweed flakes... the smell was insane 🤤 The nutty perilla aroma wafting up, paired with the crunchy kkakdugi texture, had me scraping the pot clean! If you visit Jangwongap Kalguksu, the perilla oil kkakdugi fried rice is a must-try.

## Is Jangwongap Kalguksu worth the weekend wait?

From the uniquely stretchy, cheese-like house-made noodles, to the five-stage texture change over time, the burst of nutty flavor from sesame oil dipping, the spicy Uiseong garlic kimchi, the crispy whole shrimp seafood pancake, and the ultimate nutty finale of perilla oil kkakdugi fried rice — care went into every single step from start to finish, and I felt firsthand why this place is beloved as the top kalguksu spot in Giheung-gu, Yongin 🥰

The place is clean, and the parking, waiting system, and self-service corner all show real consideration for guests, so I'm planning to come back early on a weekday soon to finally conquer the limited-edition peach bibim mandu I missed!
