Owner Kim Yong-suk, whom I had not seen in so long, treated our group with wholehearted, generous hospitality: she gave us even more noodles and carefully checked throughout the meal whether we needed more side dishes. The neatly served banchan (Korean side dishes) and house-made kimchi made me feel, with my whole being, how much care and sincerity went into every dish.

In front of the register was a note written by the owner herself: “We make tofu and noodles with care from soybeans we grow ourselves. We will repay you with delicious food.” It was a moment that reminded me that delicious food comes not from technique, but from care and sincerity. (Even the Hwangto fresh apple juice made with this year's 2026 apples, sold beside the counter, seemed to show this restaurant's commitment to wholesome food.)
