There are so many great sushi places around Jonggak Station that choosing one can be a dilemma, right? Today, I found a sushi spot that blows away most omakase places, and I had to introduce it. It’s Choe Uyeong Sushiya (최우영스시야) Jongno Branch!

My partner and I are sushi lovers even on a normal day, but we felt like eating something fancy today, so we picked the Premium sushi and Top sushi sets! They both had 17 pieces, though, so I was curious about the difference. I’ll compare the taste and what sets the two apart!

## How to get to Choe Uyeong Sushiya Jongno Branch

Choe Uyeong Sushiya is in the basement by Tower 8.

Before opening the door, I could see the Choe Uyeong Sushiya sign listed on basement level 1.

Open the door and head downstairs~

After going down, walk a little to the left and you’ll spot several congratulatory flower wreaths for the opening—that’s the place.

The sushi-shaped logo and the English words “SUSHI RESTAURANT” make it easy to spot even from afar, haha.

Having the menu and price list posted at the entrance was quietly convenient, since I could look them over before going in.

## Inside: group tables and counter seats

Once inside, a wall of green plants runs along the space, so it didn’t feel at all stuffy despite being underground. There are group tables for four or more as well as counter seats, so it seems great for both group gatherings and dining alone, haha.

## Ordering by kiosk and tablet

You can check the menu and order from the kiosk at the entrance, too. It looked like people mainly use it for takeout orders.

Each seat has a tablet, so diners can easily order from their table. The soft lighting also made it cozy and warm. I sat down and spent a while deciding what to order from the menu, and it turns out the Top and Premium sushi sets have slightly different lineups?

Both sets have 17 pieces, but the Premium sushi includes a higher proportion of luxury ingredients such as tuna belly and sea urchin. You’ll see in the food photos later, but the Premium sushi also feels much bigger, with fancier ingredients!

## Trying the Top and Premium sushi sets

As soon as we sat down, hot jang-guk (clear soup) arrived. The weather has gotten so chilly lately, so this was perfect for warming up~~

This is the house-made soy sauce at Choe Uyeong Sushiya! Mixing it with wasabi felt like it would be insanely good!

Next, the Top sushi and Premium sushi came out in that order, and the one in the middle is the premium Premium sushi! What do you think? Can you see the larger size and the extra luxury ingredients, like uni (sea urchin) and ankimo (monkfish liver)?

Honestly, every sushi piece melted softly in my mouth, but the bluefin tuna sushi especially melted the instant I put it in my mouth, haha.

The freshwater eel was brushed with sweet soy sauce, giving it a sweet-salty flavor. It was great with the egg sushi and went amazingly well with the soup, too! The Premium sushi had a more varied range of ingredients than the Top sushi, but if luxury ingredients are not especially important to you, I think the Top sushi alone would be satisfying, haha.

This was the red shrimp and sea urchin sushi that was especially delicious! The springy texture of the red shrimp plus the rich sea urchin made it go down so cleanly, which I loved. Next was negitoro! At first I thought it was bluefin tuna, but it was sushi made with chopped tuna and scallions for extra richness, and my girlfriend really loved it, haha.

This is steamed abalone! I’d never seen a place serve abalone this large on sushi, hahaha. It was so chewy that I felt like I was chewing meat. So good!

Lastly, the fried glutinous-rice mochi came out.

You can see how stretchy and chewy it is just from the photo, right? It was crispy outside and delightfully chewy inside, so it made a great side. Just dip it in the sauce that comes with it! At first I thought it was honey. It was a little sweet, but not honey—maybe it had a grated-daikon-like feel(?)? I’m not quite sure, but it was nicely sweet and totally my style, haha.
