Today I'm sharing my visit to a genuinely legit Korean restaurant in Chowol-eup, Gwangju, Gyeonggi — Bomseol (봄설 한정식). A master of Korean cuisine puts out a beautifully neat table, plus there's a generous unlimited self-bar, so both my eyes and my mouth were spoiled rotten haha!

Out front there's a wooden entrance with a warm sign reading "Welcome to Bomseol." Right next to it is a huge outdoor wooden deck terrace surrounded by green scenery and a flowing river. Yellow and blue parasols are set up too.

On the walkway into the entrance there are sentimental lines like "May your day be prettier than flowers," and hand sanitizer is on hand, so you can step in feeling nice and clean!

Inside, the ceilings are super high with exposed rafters and a wood-toned interior, so it feels totally cozy and warm, like a mountain lodge. The window-side tables let you see the river view and terrace I mentioned through sheer curtains, which gives a great sense of openness and makes the whole place feel really relaxed.

And on the walls, all over the place, there are certificates, awards and citations naming this a 'Master of Korean Cuisine,' plus a giant poster for the 'Master of Dried Corvina' — so my trust in this place shot straight up before I'd even eaten haha.

The genuinely amazing thing here is that right in the middle of the restaurant there's a huge unlimited self-bar with a sign that reads, "Help yourself as much as you like." Because table turnover is so fast, the banchan (side dishes) never dry out — they're kept moist and fresh and fully stocked.

### Banchan you have to try

- Shiitake sweet-and-sour (표고탕수): I was genuinely surprised to find sweet-and-sour shiitake at a Korean-restaurant self-bar! Chewy and sweet, I kept reaching for more.
- Lotus root salad (연근 무침): Pale, dressed lotus root with zero of that usual astringent taste — nutty and crisp, the texture is insane. T_T
- Pickles & namul (nameul, seasoned vegetable side dishes): The pickles here are seriously the ultimate rice thief! The namul are perfectly seasoned too, and the warm, chunky braised radish with sauce soaked all through it, plus the moist japchae (glass noodle stir-fry) that tasted freshly made — I refilled both without any shame, and it made me so happy.

Bulbeombeok — living up to its name! The genuine smoky char that hits the moment it's in your mouth is pure art. It's not saucy stir-fried pork with lots of broth — it's more like a crisply seared bulgogi. Despite looking dry on the outside, when you chew it, it's surprisingly not tough at all and stays tender. T_T The fragrant scallion note and the salt balance are just perfect together.

## Master dried corvina, ₩27,000 — real craftsmanship

Usually if dried corvina (bori gulbi) is made poorly, all the moisture is gone and it turns dry and tough, right? Not here at all! The flesh is genuinely tender and soft. There's zero of that overly salty taste you often get from broth-free grilled fish — just a satisfying saltiness that makes you want rice. The moment I took a bite, I actually said out loud, "Wow, this is really a master's dried corvina" haha. I also loved that it came already cleaned and deboned, so it was easy to eat!

Put a piece of the corvina on a scoop of hot, freshly cooked stone-pot rice, and finish it off with sungnyung (scorched-rice tea) at the end — perfect.

Near the counter there's a little snack corner that's great for a small pick-up after your meal! There's cauldron scorched rice (₩15,000), barley candy (₩3,000), puffed corn, roasted laver, and other nostalgic snacks like barley bread, plus they sell takeaway packs of the dried squid stir-fry and anchovy stir-fry that were so good during the meal, and the standout main dish — the dried corvina (₩18,000) — all neatly packaged for takeout! There was also a big pile of bagged puffed corn stacked in front of the counter.

## Final verdict — who should go

Because table turnover is so fast, the moist and fresh banchan, the freshly cooked stone-pot rice, the high-quality master's dried corvina, and the smoky bulbeombeok pork — nothing here fell short. I want to go back just for the shiitake sweet-and-sour, the nutty lotus root, and to raid the radish braise and pickles again haha.

If you're in the Gwangju, Gyeonggi area looking to take your parents out, or you just want a healthy, filling proper meal, I strongly recommend Bomseol — great view, great taste.
