Jeju pork that flew in straight from Jeju — great color, great marbling, and best of all, the perfect balance of lean meat and fat.

When you order meat, it doesn't come out just lightly seared — at Tamra Factory in Magok, it comes out grilled to near-perfect doneness.

Pork belly grilled deliciously to your preferred doneness, then dipped deep into the bubbling melchet (fermented anchovy sauce).

It's been a while since I've had rice like this — plain white rice made with good rice, packed in tightly by the owner's own hand. I ate every last grain gratefully.

The salt here is salt that isn't salty. They say they roast the sun-dried salt themselves, and it really isn't harsh — just nutty and mellow.
