## Side dishes and the three-kimchi self-serve bar

Once seated, we were given wrap vegetables, white kimchi, soy-onion sauce, and three types of kimchi for bossam — green onion kimchi and radish kimchi — along with ssamjang (dipping sauce) and salted shrimp.

Looking at the spread alone, it's the kind of setup you'd expect at any jokbal restaurant. But one thing stood out to me — the bossam kimchi and radish kimchi were available at a self-serve bar, so you could take as much as you wanted.

When you're eating jokbal or bossam, the kimchi often runs out before the meat does. At a lot of places you have to order more bossam kimchi or radish kimchi separately, so you end up rationing it — but here, there was no need to hold back.

Personally, the kimchi really suited my taste that day, haha. The seasoning had a fairly deep umami that cut through the richness of the jokbal, so I kept pairing kimchi with every bite of meat. The meat was great, but being able to freely grab three kinds of kimchi from the self-serve bar turned out to be a bigger perk than I expected.

## Makguksu and sundubu-jjigae that come with the jokbal

Ordering jokbal also brought out makguksu (cold buckwheat noodles) and sundubu-jjigae (soft tofu stew). These weren't separately ordered dishes — they came as part of the jokbal order at the time of our visit. The makguksu had more vegetables than I expected.

Eating the noodles together with the vegetables rather than alone kept a nice crunchy texture, and it was perfect for whetting the appetite before getting into the jokbal proper — a piece of jokbal on top of the makguksu worked great too.

The sundubu-jjigae had a slightly different feel. Rather than the traditional flavor, it had a familiar umami that reminded me a bit of ramen seasoning packets. Maybe because of that, I tried the broth and immediately ordered rice to go with it, haha. It was also nice to have a warm spoonful of broth whenever I wanted something hot in between bites of jokbal.

## How did the original jokbal taste?

The main dish we ordered was the half-and-half jokbal, letting us try both the original and grilled deri flavors together. With my parents and a child at the table, I figured it'd be better to try a bit of both rather than commit to just one.

We started with the original jokbal. Each piece was sliced fairly thick, and it wasn't tough at all when chewed — quite tender. The lean meat was soft, and the texture got chewier toward the skin.

Above all, the seasoning wasn't overdone. Rather than a strong hit of spice or soy sauce, the flavor was subtly worked in, which made it easy for my parents to enjoy too. Personally, I find that with this kind of original jokbal, the meat around the skin and bone tends to taste the best — I picked the bones completely clean, haha.

Eating the meat and skin together let me chew through both the tender and the chewy parts at once, which made the texture feel richer. I paired the original jokbal with salted shrimp and all three kimchis in turn.

### How sweet is the grilled deri jokbal?

Then came the dish that impressed me most that day — the grilled deri jokbal. At first, I worried that a teriyaki-style sauce might make it overly sweet.

But once I tried it, it wasn't nearly as intense as I expected. Before it even reaches your mouth, a subtle charcoal-grilled aroma rises up, followed by the sweet umami distinctive to teriyaki.

The sauce wasn't so strong that it masked the meat's flavor, so the jokbal's inherent tenderness still came through. Above all, the meat was really tender — the skin in particular practically melted in the mouth, which I really liked.

While the original jokbal was fun to eat with kimchi and wrap vegetables, the grilled deri jokbal was satisfying enough eaten piece by piece on its own, no side dishes needed. One bite led to another, and another — that kind of addictive flavor.^^

## Mouthwash and single-use floss after the meal

After eating your fill of meat, your mouth can feel a bit heavy sometimes. But the restaurant had mouthwash and disposable dental floss ready. After eating something like jokbal, where meat easily gets stuck between your teeth, this small touch was more welcome than expected. After a quick tidy-up post-meal, I left with a refreshed mouth — really nice.
