As the weather starts to cool down, there's one dish that comes to mind — bubbling mandu hot pot (dumpling stew)! Today I wanted a hearty but not-too-heavy meal, so I went to Siksa-dong's well-known restaurant, Arirang Gaeseong Son Mandu Siksa Branch.

A hot pot loaded with big handmade dumplings and plenty of vegetables passed the first visual test right away! Since it felt like a waste to try just one kind of dumpling, I ordered the half-and-half mandu hot pot for two.

Walking in, the space was more spacious than I expected, with tables set well apart. It had a clean, comfortable Korean restaurant atmosphere, which made it seem like a good spot for a family meal or bringing your parents along.

The real highlight here, true to its name, is the handmade son mandu made fresh every day! It's a place where you can enjoy dumplings packed full with fresh ingredients alongside a light, clean broth.

There's a self-serve bar for kimchi and pickled radish on one side. Since you only take as much as you need, you can go back for more without feeling awkward if you run out. A crunchy piece of pickled radish or a bite of spicy kimchi in between spoonfuls of mandu hot pot totally resets your palate. The combo of clean broth and kimchi is honestly unbeatable, haha.

Finally, the half-and-half mandu hot pot arrived! A big pot was loaded with handmade dumplings, topped with a mountain of bean sprouts and bok choy. When it first came out, it looked so generous I wondered if this was really just two servings! As it started to bubble, the bean sprouts wilted slightly and the vegetables' clean flavor seeped into the broth — the smell alone hit the appetite button hard.

The bean sprouts kept their crunch and the bok choy cooked down softly, pairing well with the clean broth. With plenty of vegetables, it was great to enjoy shabu-shabu style first, then pair them with dumplings in between bites.

Ordering the mandu hot pot also comes with kalguksu noodles and ready-to-eat steamed dumplings. Scooping up one meat dumpling, the size alone was impressive. Lifting it with chopsticks, it felt seriously heavy! Cutting it in half revealed just how good it was — inside the thin, chewy dumpling skin, the filling was packed in without a single gap, and one bite delivered a rich, full texture.

From bean sprouts to bok choy, napa cabbage, mushrooms, sweet pumpkin, and rice cake, fishing everything out was genuinely fun! With so many vegetables, it was perfect for cooking them one by one shabu-shabu style — the crunchy texture combined with the clean broth kept me reaching back in.

Ordering half-and-half meant I could alternate between the mild dumplings and the spicy ones, which made it even better. Eat one, then the other... at some point I caught myself actually counting how many dumplings I'd eaten.

I also loved the rustic, homemade look of the handmade dumplings. Instead of that machine-stamped uniform look, it really had that 'this is a genuine handmade dumpling' vibe.

## Finishing the broth with kalguksu knife-cut noodles

Once you've had your fill of dumplings and vegetables, it's not over yet. Noodle time! By the time you add the kalguksu noodles, the broth has had plenty of time to soak up the flavor from the dumplings and vegetables, kicking off a completely different second round. Lifting a big chopstick-full of well-cooked noodles, they gleam with a glossy sheen — chewy noodles wrapped in deepened broth make it hard to put your chopsticks down even when you're already full.

Eating the dumplings, fishing out the bean sprouts and bok choy, and finally slurping down the kalguksu noodles — it was such a filling meal that a single pot felt like a full course.
