While looking for somewhere to eat near Simhaksan in Paju, I ran into a jjamppong (spicy seafood noodle soup) with an absolutely serious visual. Not just a bowl of soup — a stone plate, heated hot, still bubbling away right to the end! This time I visited Dolpanseok Jjamppong Paju Simhaksan Branch (돌판석짬뽕 파주심학산점).

Today's order was stone jjamppong (medium) + tungbosha (튄보샤, fried stuffed toast) 4pcs, and I couldn't just walk past without adding a whole octopus too! The visual alone was no joke, and the flavor kept changing as I ate, so let me introduce it.

Dolpanseok Jjamppong Paju Simhaksan Branch has a building parking lot, so it was easy to get to by car. The first thing I liked when I arrived was how spacious it was. In Paju, where you drive around a lot, parking space matters more than you'd think. There's a lot of open space in front of the store, making it easy to visit by car.

The building itself is large so it wasn't hard to find, and best of all, during mealtime the place was packed with customers! The tables have relatively generous spacing and the ceilings are high, so it felt less cramped. Good atmosphere for eating with family or a group, sharing a hot stone jjamppong.

On one side there's a neatly arranged self-serve corner. Onion, danmuji (pickled radish), and a delicious green onion kimchi — the classic side dishes that go perfectly with jjamppong — you can help yourself to as much as you need, which was convenient. Especially after a spicy bite of jjamppong, one crunchy piece of danmuji and your palate feels totally reset! The green onion kimchi was particularly memorable. Since rice is unlimited, I scooped a bowl, piled on the green onion kimchi, straight into my mouth! That I finished a whole bowl of rice before the jjamppong even arrived is not a secret anymore~

And finally, today's star arrives! I added a whole octopus to the stone jjamppong, and the moment it landed on the table, the presence was enormous. On the piping-hot stone plate, the red broth bubbling away! Bean sprouts piled up like a mountain, and peeking through them, a big chunk of octopus — the kind of visual that makes you grab your camera first. Jjamppong or hot pot... it was that generous. The fun of Dolpanseok Jjamppong isn't just that it's hot. It starts as a rich, spicy noodle soup, and as the bean sprouts cook down, the crunchy texture adds a charm closer to a stir-fried jjamppong.

### Is the whole octopus add-on worth it?

I lifted the octopus with tongs and was surprised by how substantial it was! Bubbling away in the broth on the stone plate, the spicy seasoning soaks right into the chewy octopus. Cut into bite-size pieces and eaten together with the noodles and bean sprouts, the texture combination is spot on. If you like seafood, this is exactly why I'd recommend adding a whole octopus!

With the octopus in, the visual gets even richer and it goes well with the spicy jjamppong. Besides octopus, there's a wide range of seafood to choose from too — big shrimp, squid, shellfish and more.

### Slurping the noodles: careful, the stone plate is hot

You really feel the power of the stone plate when you lift the noodles. The strands come up wrapped in red jjamppong broth, but the problem is, no matter how tempting it looks, you can't just slurp it right away. The stone plate keeps working overtime, so it stayed pretty hot right to the end, haha. Blowing on it as I ate, grabbing the noodles together with the crunchy bean sprouts gave a great texture, and the broth doesn't cool down easily over time, so you can enjoy it hot all the way through — that's definitely different from regular jjamppong.

## Stone plate, jjamppong and nurungji: the payoff at the bottom

The heart of Dolpanseok Jjamppong is the combination of a piping-hot stone plate + jjamppong + nurungji (scorched rice crust). The way you eat it is clearly different from regular jjamppong, so it's worth remembering when you're after something different from the usual. I heard the stone-plate jjajang is also cooked to order and served hot on the stone plate, so now I want to try the jjajang next time too.

At Dolpanseok Jjamppong, the nurungji really shows its worth as you get toward the end! Having soaked up the spicy broth properly, it turns soft and nutty, making for an ending quite different from the jjamppong you started with. So even though it's technically one dish, it felt like eating several different things. Since the flavor keeps shifting on the same plate, there was never a dull moment while eating.

It felt like a waste to eat only the stone jjamppong, so I ordered tungbosha 4pcs. Cute name, right? But seeing it in person, it really lives up to the name, haha. Menbosha (stuffed toast, fried) has a thick look, fried golden and crispy on the outside, and one bite reveals a moist, plump filling inside. It was the perfect side dish to pace between bites of spicy stone jjamppong. Dip it in the sauce and the sweet-and-sour flavor adds another charm.

The combination I had this time — stone jjamppong (medium) + whole octopus add-on + tungbosha 4pcs — was properly generous. Fiery broth at first, bean sprouts and noodles mingling in the middle, and finally nurungji soaked full of broth at the end!

Especially since the stone plate stays hot right to the end, this should suit anyone who feels 'jjamppong should be hot!' If you're looking for a filling meal with family after a walk around Simhaksan, or a Paju Simhaksan restaurant with a visual that's a step above ordinary jjamppong, Dolpanseok Jjamppong Paju Simhaksan Branch is worth remembering.
