## What is gabrisal bossam like?

I started with the gabri kimchi bossam. Since the gabrisal is boiled thoroughly, the meat is remarkably tender. The savory, clean flavor characteristic of gabrisal came through more strongly the more I chewed, and there was absolutely no gamey smell — very clean.

With bossam, if the meat itself has any off smell, you end up leaning heavily on kimchi or sauce to cover it. Here the meat tasted good on its own. The savory flavor of the well-boiled gabrisal really came through, giving it a different feel from the bossam I usually eat.

## Kimchi filling and radish kimchi with the pork

The kimchi pairing that's essential to bossam was also quite good here. The gabrisal bossam comes with kimchi filling seasoning and sweet radish kimchi. I topped the clean-tasting meat with the kimchi filling seasoning and added the sweet radish kimchi too — and yes, this is how bossam is meant to be eaten.

The rich kimchi filling seasoning balanced out the cleanness of the meat, and the radish kimchi added a sweet, crunchy texture that kept me reaching for more meat. Personally, piling on plenty of kimchi filling along with the radish kimchi all at once was my favorite way to eat it. The savoriness of the gabrisal and the rich kimchi seasoning worked together better than I expected.

## Clear, refreshing seafood kalguksu

I also tried the seafood kalguksu ordered alongside the bossam. At first I had it without dadaegi, in the clear broth as is — loaded with mussels, blue crab, and bean sprouts, the broth had a refreshing, clean taste.

The umami from the seafood combined with the refreshing taste of the bean sprouts made it easy to take a spoonful of broth in between bites of bossam. Cooked with the kalguksu noodles in, it's hearty enough as a full meal, and with the generous seafood, it also holds up well as a drinking snack. Eating the broth alongside the bossam paired nicely with the clean flavor of the meat.

## Adding dadaegi for a spicy broth

Another thing I liked about the seafood kalguksu at Sonjeong Bossam Sindorim Branch is that you can add dadaegi to taste. I started with the clear broth, then added dadaegi partway through, and the broth turned rich and spicy. The clear broth feels refreshing and clean, while adding dadaegi brings a spicy, deep flavor that makes it a great pairing with drinks.

Personally, I'd recommend tasting the clear broth first rather than dumping all the dadaegi in from the start, then adding it gradually to your taste. Being able to enjoy both the clean and the spicy versions from one pot makes it easy to control the spice level as you go. With plenty of mussels, blue crab, and bean sprouts, it made for a pretty great snack for anyone having a drink.

## Hidden favourite: algon-i-jjim (steamed fish roe)

There's one more menu item at Sonjeong Bossam I really want to mention. It's algoni-jjim (braised roe and milt). This time I ordered the bossam and kalguksu set so I didn't order it separately, but on a previous visit I tried it and it was so much better than expected that it stuck with me.

It's a dish of roe and milt in a spicy sauce, with a rich, spicy seasoning that works well as a drinking snack. Pairing the clean, savory gabrisal bossam with the spicy algoni-jjim turned out to be a surprisingly good combination. It has a different appeal from the bossam itself, so if you're visiting with a group, I'd recommend adding algoni-jjim to share.

## A good first stop near Sindorim Station

Sonjeong Bossam Sindorim Branch is a place where the appeal really comes through when you order the bossam + seafood kalguksu combo rather than just the bossam alone. Topping the tender, savory gabrisal with kimchi filling and radish kimchi, then dipping into the refreshing seafood kalguksu broth in between, was a really good combination.

I also liked being able to start the kalguksu clear and then make it spicy with dadaegi, and the broth worked well for cleansing the palate between bites of bossam. Best of all, being in the food alley near Sindorim Posco the Sharp makes it a convenient spot to meet at Sindorim Station, eat bossam as a first round, and move on from there for round two. It works for a solid lunch or for bossam and kalguksu with drinks in the evening — a place you can enjoy differently depending on the time of day.
